Pork with Linguine and Blue Cheese Mushroom Sauce

Added garlic and some chopped onions to the mushrooms and used extra virgin olive oil instead of butter. Nice rich flavor. My husband and I really enjoyed the sharp cheese flavor, too.

Spicy Southwest Chicken Casserole

Loved this recipe! Easy and very flavorful. It allows for you to add or subtract certain ingredients based on tastes and whether or not you have them available. My husband raved over it and my grade school aged boys ate it with minimal complaints about the black beans. (Get over the bean aversion already, boys!) I will definitely make again.

Easy Pineapple Cake

I make this all the time and have passed the recipe on again and again. I tend to make low fat/low calorie substitions, but be careful doing that with the frosting - you must use either full fat butter or cream cheese for the right consistency. Love this recipe!

Spinach Ziti

I loved it! and so did my family including my pre-schoolers. I did add about 1/3 cup milk with the cream cheese and 1/2 cup prepared tomato sauce with the stewed tomatoes. I did thinly slice pork tenderloin and brown with some garlic and Italian seasoning and added to the pasta for my meat lovin' family. I think it would be good with sliced/diced chicken, too.

Grilled Teriyaki Tuna

Just tried this recipe to the letter and Loved it! My husband was leary about cooking it for only 3 or 4 total minutes so we tried one fillet for 6-8 minutes total and the other for 4 minutes total. Both were great, but the one on the grill for only 4 minutes was better. So good we are making it for my in-laws birthdays in a couple of weeks.

Garlic-Buttered Green Beans

I have roasted a chicken the night I made this and used about 2.5 T of the chicken grease instead of the butter. Seemed like a lot of butter. The green beans were AWESOME!! I will definitely make it again.

Stuffed Meat Loaf

I have a Taste of Home cookbook with this recipe and made it. AWESOME! Easy recipe and delicious. My husband usually likes meatloaf with sweet ketchup sauce or BBQ sauce, but said this was the best meatloaf he'd ever had.

Beef and Mushroom Stuffed Peppers
