Very good recipe. If you want to make just one quiche, use 1/4 cup or less (next time I will use 3 T because I think 1/4 is still just a tad too much). I used fresh spinach and wilted it after the onions and garlic was simmered. Fresh mushrooms are better. Only used 1 garlic clove because other family members have a sensitve tummy, havarti cheese instead of feta, and to make it very creamy and not too liquidy, use 2 full eggs and 2 egg yolks instead of all four eggs. Also using 1 cup of heavy cream made it perfect. To test if done, slide a butter knife about 1-1/2 inches from the outside rim. If it comes out clean, it's ready to be taken out of the oven. Allow it to stand for 10 minutes and then try to only eat one piece. You won't be able to stop with just one piece.
