Chicken Pot Pie IX
This was delicious. I usually don't eat chicken, but I had some left over from when we had company for several days and this was a good way to use it up. I was going to get the Pillsbury pre-made pie crust dough, since I was short on time, but when I read the ingredients (lard, partically hydrogendated lard), I put it right back on the shelf! I ended up fixing garlic mashed potatoes to put on the top instead of a crust. I did add minced garlic, sage, thyme, rosemary and parsley as someone suggested. It added more flavor. I also cooked the veggie's in vegetable stock (Vogue Vegge Stock). I used 1/2 olive oil and 1/2 butter. I added some cauliflower to the other veggies. It was great. Thanks for sharing Robbie!

Moroccan Tagine
I fixed this today and my husband and I both enjoyed it. I omitted the chicken and didn't have a carrot. I added a smidgen of cinnimon as someone suggested. Next time I will add a tiny bit more cayenne pepper. Definately will make this again. Thanks for sharing!

Broccoli Chicken Fettuccini Alfredo
I used an organic cream of muchroom soup which was not condensed so I omitted the milk. Flavor was good. I would double the broccoli; 1 cup was not enough for us. I would also add the Parmesan cheese on top rather than stirred into the sauce as someone else mentioned. (Makes the pan a lot easier at cleanup.) I added 3 cloves of minced garlic with Smart Balance "butter" to saute the organic/free range chicken. I steamed the organic broccoli for only 2.5 to 3 minutes in a steamer basket on top of the boiling pasta; I did not add it to the water. That left it "crisp/tender". Nice idea to use the soup for a lighter version of Alfredo.
