Fish Tacos

This was wonderful! The batter was wonderful, I forgot to dip the fish in flour before the batter, and I pan fried them as I don't have a deep fryer...and still they were crispy and flakey! I left out the capers and substituted the dill for garlic powder in the sauce (I didn't have any), it was still really good but I will probably try it with next time...I can see how those would add an extra but of flavor. My husband was a bit unsure of the sauce, but he really liked it...said it was true to the kind if tacos you'd get down in ensinada. We are from San Diego, so it's nice to have a good recipe for home instead of going out!

Easy Asparagus

Really tasty, really good. However, wasn't as simple as it sounded. I attempted this a while back when I wasn't cooking very much yet and it wasn't "easy". Now perhaps I could do it, but it was alot of hassle when I could have steamed them.

Apple Pie by Grandma Ople

I wish I could give it more stars! I've seen this recipe multiple times and seen how highly rated it was...finally I decided to try it last night for my in-laws. I believe my mother-in-law's words were: "I believe that was the BEST apple pie I have ever had!" (Not words to be taken lightly!) Thank you so much, delicious!

Herb Roasted Pork

My husband and I were also slightly skeptical...but this is DELICIOUS, the glaze has such a wonderful flavor after it has been brushed onto the roast! I did not cover the roast at all and seemed to have no issues with moisture (and that is the main reason my husband won't typically eat pork!). I used garlic powder in the rub and used one garlic glove to slide slivers into the roast. I also drizzled a little oil over the top (as I don't have a roasting pan) and cooked in a shallow corningware dish. I also followed someone elses suggestion to used balsalmic vinegar. I basted the roast with the glaze 3 times. The remainder still had a very vinegar flavor (most of which baked off of the glaze when basted), so I did not drizzle over the top after the cook time was over. I poured the remainder into a dish to use as desired. DELICIOUS!!!

To Die For Blueberry Muffins

delicious! I also left out the suggested vanilla, and they were wonderful. The batter is very thick, I filled to the top of the cups as suggested and they came out big and round on top! I seemed to only need about half (or maybe a little more than half) of the crumb mixture, which was a fun touch. this will definitely be my new blueberry muffin recipe! Moist and crumbly!

Chocolate Chocolate Chip Cookies II

Delicious...and my mom the chocoholic, loved them. She thought they might also be good with peanut butter chips. I did take one of the other posts advise and added 1/2 tsp of salt. I underbaked them (about 10 minutes) because I like them soft and chewy. DELICIOUS!!! Do make sure to mix "Dry" (flour, cocoa, baking soda, salt) and cream "Wet" (sugar, brown sugar, vanilla, butter, and eggs) Combine the dry into the wet and when well mixed then add chocolate chips.

Sandy's Chocolate Cake

Delicious. Very dense and rich...but the perfect moist cake I made this for when my in-laws came to visit...they all loved, even my husband liked it (and he's not a chocolate fan) Thought the sour cream was weird...but gives the frosting a fantastic flavor! One of my favorites now...
