Easy Cauliflower and Broccoli au Gratin

Always looking for low carb recipes that are tasty and this one is great!! It makes eating veggies seem like a real treat. We have this as often as we can, and with low carbs, it is great for my diabetes! A keeper for sure!

Cabbage Kielbasa Supper

This is a great, quick & easy meal. The only change we made was to add Worcestershire sauce...1 to 2 tbsp as to your liking. Will make this again and again for sure.

Anniversary Chicken I

We LOVE this recipe! Lower in carbs is what I made it for the first time.....but it is now one of my go to recipes. You cant go wrong with this one~~~~~ :)

Modenese Pork Chops

This is a great recipe!! So flavorful, and so easy...the only thing we added was a little more garlic, and fresh rosemary. Will make this again for sure. An added plus was that it very low carb which is great for a diabetic.

Country Breakfast Casserole

We LOVE thos breakfast casserole. For a change, we sometimes sprinkle cinnamon sugar on the bread topping about 15 minutes before it is done and ready to serve. Almost like french toast on top and adds a whole new flavor to the dish.

Yummy Roll Ups

This has been my "go to" recipe for years when I need a quick appetizer. The only thing is I have always used bread & butter pickle spears instead of dill. No matter how many of these I make, they disappear right away.

Easy Cauliflower and Broccoli au Gratin

As a recently diagnosed Type 2 diabetic, I am on the look-out for low carb recipes that are still tasty. This recipe fills the bill!!! I do mix the cheddar in with the sour cream and cream cheese however. I also mix the parmesan with the crackers and put it back in the micro for another 2 minutes. I have made this for company numerous times and they all are amazed that is a recipe that is low carb and good for you.

Nikki's Creamy Crock Pot Potato Soup

We like hot and spicy, but my oh my, too much red pepper flake. We will cut it by at least half the next time we make this. Also, too much seasoned salt...will also cut in at least half. But all that being said, the soup will be one we make again and again I am sure. We did add more bacon and onion and simmered in the skillet with bacon drippings and then moved to crock pot. The basic recipe is good and we will tweek it to our tastes.

Chicken Florentine Casserole

This is a tasty dish that was easy to prepare. As someone who has to watch my carbs, this is great dish that the whole family liked. Will make it again for sure. My only change would be cook the chicken no more than 20 minutes so it does not overcook.

Roasted Asparagus and Mushrooms

Spinach Stuffed Chicken Breasts

This was a great dish!! We don't like feta so we used cream cheese in its place and it made it very creamy and tasty. After cooking covered for the hour, we took off the cover and let it cook uncovered for about 5-8 minutes to cook the bacon thoroughly. We will have this again and again. Served over rice pilaf and what a meal it was!! Thanks for sharing!!!

Luscious Lima Bean Soup II

We used about 6 or 7 slices of bacon, but otherwise followed this exactly and it was a big hit. The first nite it was good, but as leftovers on the second day it was totally AWESOME. Everyone loved it especially on a cold midwest autumn nite.

Kielbasa and Cabbage II

This is a real comfort food dish!! The only thing we do different is to sautee the kielbasa with a tsp. of cajun seasoning first and then add it to the rest of the mixture. We usually eat it by itself and it is a wonderful meal on a cool fall nite.

Sweet Sausage 'n' Beans

We made this on the stovetop and it was GREAT! We sauteed the sausage and onion first, then added the ketchup mixture and simmered it for about 10 minutes. Added canned veggies, simmered again for 20/30 minutes. It was delicious and easy to do. Next time we will plan ahead and make it in the crockpot. This is a keeper for sure!!

Savory Grilled Potatoes

We made 2 individual pouches and they turned out great. Next time we are going to add some bacon to the packs as a change, but the basic recipe is a keeper. SO easy and tasty, we too used some extra cheese and garlic, and were glad we had. It is a definite winner for us!!

Grilled Sausage with Potatoes and Green Beans

YUMMY!!! So easy and quick to put together and easy clean up afterwards. The veggies were all steamed to perfection, meat juicy and so flavorful. We layered onion, potato and then green beans and sausage. We also buttered the foil before layering. We will do these again and again.

Banana Crumb Muffins

Great basic recipe and so easy to make. After making them according to the recipe, we "tweeked" them to our tastes. We added 1/2 tsp. vanilla extract and some chopped pecans. Also have used 1/2 tsp. coconut extract and some chopped macadamia nuts. This is a keeper recipe for sure!!
