Pork Chalupas

Reviewed: Jun. 19, 2013
delicious! instead of the green chiles i used a 12 oz. jar of green salsa. cut the chile powder in half, and added a diced red bell pepper for color. soaking the beans overnight is a good idea!

Megan's Granola

Reviewed: Dec. 2, 2012
Great flavours; good fruit & nut to oatmeal ratio. Followed suggestions to bake at 300 or lower for 40 mins; worked perfectly. Can reduce honey and/or maple with little sacrifice for flavour.

Okinawa Shoyu Pork

Reviewed: Oct. 23, 2012
I grew up in Okinawa so of course I had to try it! The smell is so good while it's cooking... I have also made this adapted for the slow cooker using a pork loin. Just halve the ingredients for the sauce, make sure the sugar is dissolved in the shoyu, and pour over the chunks of pork cook on low for 6 hrs or so, turning chunks once, and when it's done, it'll fall apart in delicious pieces.

Lemon Yogurt Muffins

Delicious! We prefer to skip the glaze; the muffins are light enough to enjoy on their own. Definitely double the juice & zest.

Miso Braised Pork

Reviewed: Nov. 14, 2011
i made this in the slow cooker and it turned out amazing! i even caught the husband eating chunks of pork out of the pot, something he never does! i cut the roast into smaller pieces, browned all sides in a little oil, and made the sauce in the same pot. i lined the bottom of the slow cooker with a sliced onion, and placed the pork pieces on it, then dumped the sauce in. after about 5 hours on high, the meat was falling apart in tender chunks and the house smelled wonderful. plenty of juicy gravy too! next time because i like ginger so much , i think i'll simply add sliced ginger to the slow cooker with the onion bed.

Pumpkin Bread Puddin'

Reviewed: Dec. 31, 2010
absolutely delicious, and a huge hit this T'giving! the comments were really helpful; used whole eggs instead of separated ones like koolandblue suggested; baked it in a corningware casserole dish, and omitted choco chips. i used leftover bread that i'd made a week earlier. really great flavour and texture -- it may look a little messy or squishy but don't be fooled -- tastes amazing!

Tipsy Peaches

Reviewed: Aug. 9, 2008
delicious! i've been trying to find creative ways to use the yield from our very prolific peach tree, and this is a great way to do it. i think the vanilla is a necessary ingredient if using whisky; it balances the flavour nicely. cook times seem to be a bit long; not wanting completely mushy peaches, i've cut the times given in about half. the sauce turns dark and thick at low-medium heat in much less than 20 minutes.
