Carrot and Ginger Soup

Great recipe! A few minor changes...cooked 1/2 squash (14 oz) in microwave instead of oven (cut squash in half, scoop out seeds, micro for 5 minutes, scoop out inside, etc), used 1/2 chicken broth 1/2 water, added a bit of nutmeg in addition to cinnamon, used 1 T. of jarred minced ginger instead of fresh and stirred in a tablespoon or two of plain yogurt before serving. Excellent subtle flavor and beautiful color!

Bread Pudding II

Yes yes yes. This is an excellent recipe. I used 4 left over hamburger buns and 4 slices of grainy ww bread. Other mods per other reviewers: only 3 eggs, 1/4 c brown and 1/4 c white sugar, added a few shakes of ginger. Served warm with fresh whipped cream. Perfect. I will definitely be making this again. Thanks for sharing!

Herb Biscuits

Loved em! Pretty high wow factor. Super easy. I cut them in quarters as directed and put them in muffin tins (4 pieces each) instead of one 8" pan. Worked out perfectly!

Light Oat Bread

Excellent! I sized down to 9 servings for my 1 1/4 size bread machine loaf but other than that followed the directions exactly. Very light and airy! Someone mentioned the oatmeal "melts" into the bread - it does. I love grainy bread and this is not that! More like airy white bread or sourdough without the tang. Easy to slice. May add a bit more salt next time. Other than that...perfect!

Chocolate Cakes with Liquid Centers

Amazing! While I can't figure out how these bake up to cakes with only a tiny bit of flour in them, they were amazing! Definitely company worth. Served with freshly whipped cream. One word...DIVINE.

Chicken and Biscuit Casserole

Excellent! I was so excited to find a chicken pot pie/biscuits recipe that did not call for condensed soup (yuck!)! Made this for dinner last night pretty much following recipe as written. Omitted celery (none on hand), added mushroom and diced red potatoes (pre cooked in the microwave), used fresh peas and doubled the garlic. Did 6 drop biscuits on top and while this worked fine, would prefer to do smaller drops next time - like 10 or 12 small drops. Also, could cut biscuit batter back by 1/4 and still have plenty. Ended up throwing out 6th biscuit because there wasn't enough chicken-y goodness to adequately cover it. Easy peasy although it takes a little more effort than a dump and bake recipe but well worth the effort! Tastes great!

Cousin Cosmo's Greek Chicken

Amazing! Simple, beautiful, definitely "company worthy". Served over browned Israeli couscous with lemon on the side. Next time I will use a little less feta to stuff the chicken breasts and add the spinach later as adding it when you add the liquid really kills it! Still tastes great but I like mine a little less...mmm...dead. All in all...excellent!

Superfast Asparagus

Simply excellent! Who would have thought? I sprayed with a little olive oil spray, sprinkled with sea salt and roasted (along side pork tenderloins and red potatoes) for about 10 minutes. Perfect.

Slow Cooker Chicken and Dumplings

Great comfort food! Super easy. Used 1 can of cream of mushroom and one can of cream of chicken. Also added carrots, potatoes and fresh mushrooms. Yum!

Zucchini Risotto

Fan-tas-tic!!! Made this for dinner last night and it's a "serve to company" kind of dish. Made a few mods: halved the recipe as I am cooking for two (it made 3 good size servings), added 8 oz of sliced cremini mushrooms, 3 baby carrots and a tablespoon of minced garlic to the onion saute in the beginning (then added rice and broth, etc), doubled the thyme (1 t. for half batch) and used 10 fresh basil leaves. It took about 20 minutes for the rice to be done, added zucchini ribbons and sun dried tomatoes (yum!) and stirred for another few minutes. Wah-la...done. Now I do have to admit, I broke the rules and did not stir "constantly"...more like I was standing right there and stirred very frequently (slice one carrot, stir, slice another carrot, stir, etc). It still turned out perfect. Creamy, flavorful and all around a keeper! Try it...you'll like it!

Quinoa and Black Beans

Excellent vegetarian dish! A favorite on those "craving comfort food" nights! I generally make the recipe as written except only use 1 can of black beans when cooking for the two of us. Gives us two hearty portions plus leftovers for lunch the next day.

Lower Fat Banana Bread I

Excellent "healthy" banana bread recipe! Made the following mods according to previous reviewers suggestions: substituted brown sugar for white, 1 cup whole wheat flour + 2/3 cup white flour for 1 2/3 cup white flour, unsweetened applesauce for butter (used entire little individual size carton - about 1/3 cup), ff milk for water; used 3 bananas mashed(about 1 1/4 cups); added 1 t. vanilla, 1 t. cinnamon and 1/2 cup chopped walnuts; baked for 50 minutes at 325 degrees. May up the cinnamon and add some nutmeg next time to spice it up a bit more. This recipe has just rocketed to the top of my banana bread recipe list! Love it!

Quick Black Beans and Rice

Very quick and very good! Perfect for those times when you are wanting something comforting and solid. Good flavor. Instead of instant rice, I used a package of Trader Joe's Fully Cooked Long Grain Brown Rice which I stirred in at the end and then let it all simmer together for about 5 minutes. No problems with gumminess. Also added some cumin and used minced garlic (sauteed with the onion) instead of garlic powder. All in all a winner! Yum!
