Loved it! Refrigerated overnight and cooked 1hr covered, and then 20-25 min uncovered. I definitely like this recipe much better than the "World's Best Lasagna" recipe found on this site. This one is also cheaper and easier to make.

BBQ Pork for Sandwiches

Gourmet Mushroom Risotto

I used organic mushrooms and used truffle oil instead of olive oil when sauteeing the shallots. Also took about 7 cups instead of 6 to reach the consistency that I wanted. It was heavenly! Had a rich and creamy taste without any cream! No more craving restaurant mushroom risotto when I can make it at home! =)

Eggplant Parmesan II

Delicious! I changed it a little by using half panko and half breadcrumbs, and also salted the eggplant first to remove bitterness/extra moisture. You wont even miss having meat with this dish!
