Lemon Lover's Pound Cake

This is an excellent pound cake. Follow the directions exactly and you'll end up with a perfect Lemon Cake or switch up the extracts and zest to customize. I paired the lemon version with "Blueberry Sauce" by Isybel here on allrecipes. Thanks for sharing - this one is going in my recipe book :-)

Spicy Bean Salsa

Everyone loved this! It's a great standard cowboy caviar and very easy. I only used 1/2 cup of Italian dressing and it was delicious, and not too liquidy. All in all, a crowd pleaser :) Thanks for sharing :)

Annie's Fruit Salsa and Cinnamon Chips

I loved this recipe! Very easy and nicely flexible - I used pita bread instead of the tortillas and they were delicious. Served it at my party and put the rest on waffles the next morning :) Thanks!

Downeast Maine Pumpkin Bread

This bread was great and super easy! It yielded exactly three loaves, was nice and moist and even survived switching out all the oil for apple sauce, and using half whole wheat flour. Thanks for sharing!

Mini Pineapple Upside-Down Cakes

This recipe is great! It's so moist and delicious and everyone gets pineapple AND a cherry :) It's also basically foolproof - I even ran out of pineapple rings and just used the leftover bits (from trimming the rings) to fill the empty cups and they were still pretty. It is semi-tedious to trim the rings, but if you have giant muffin tins the rings fit in as-is.

Red Potato Chicken

5 stars for ease and versatility! I used what I had on hand (chicken cutlets, fat free, low cal Italian dressing, celery, onion, carrots) and it still turned out great! This is a great base recipe that works with different spices and delivers flavorful, moist chicken. I did follow others' advice though and half-cooked the potatoes and chicken before baking (which cut the oven time to 35 minutes). Thanks - I'll definitely be adding this to my regular rotation!

Playgroup Granola Bars

This is a great base recipe for granola bars. I usually try the recipe as-is first (in honor of the original chef) but I'm on a diet right now, so I changed out the oil for applesauce and the brown sugar for agave syrup. I'm sure this made them much chewier than they would have been, but we still loved them :) I used dried cranberries and the flavor was still excellent with the original spice/salt proportions. Some reviewers mentioned that the cooking time was off - I only baked mine for 25 minutes and they were chewy (mostly due to the applesauce) but I think the difference probably lies in how old/new/fancy/simple your oven is (I have a new oven, but it's a very standard model). All in all, a great recipe!

Green-Tea Cupcakes

I made this for some green tea fans and it was well received. However, they were at bit dry after 20 min, so I tried them at 17 and 15 min, and 15 minutes was the winner. I foolishly bought matcha tea bags (which is powder plus tea leaves) instead of powder, but just used my coffee grinder to make my own powder. It gave a beautifully rustic green color to the cakes, although I'm sure it would have looked more "delicate" if I had started w/ the real powder. I made a simple glaze out of confectioner's sugar, non fat milk, and lemon juice (to taste) and dyed it a pastel green. Adorned with some simple gum paste cut-out jasmine flowers and they looked a lot harder to make then they were :) All in all a good recipe - thank you for posting it!

Chocolate Chip Banana Bread I

This recipe is so easy and really delicious. I substituted all purpose flour for the cake flour (one cup minus 3 tbsp) the first time and used cake flour the next time and both times it was great! The light banana flavor was perfect with the chocolate (although I used a little less choocolate than was called for). Thanks for sharing this!
