Banana Muffins II

Excellent. Very moist and very easy to make. Once I had the batter done I knew it was going to be good because it was just so fluffy. I used egg replacer rather than the egg (we have an egg allergy in my house) and it was still awesome. This recipe has been printed and added to my binder as my one and only banana muffin recipe. Thumbs up!

Eggless Chocolate Cake II

Um... it tasted good, but you can tell it's different from your average cupcake. The texture is a little softer. I did add the chocolate chips, but I don't think it was absolutely necessary. Get a good frosting on there and you won't notice the cake is a little different. I also added a tsp of instant espresso powder but not sure if that really added anything. Good if you have an egg allergy; if not, stick with a traditional recipe.

Bran Flakes Muffins with Raisins

I made these twice. The first time I used butter and whole wheat flour. They were OK but very greasy and salty. The next day I made a batch with applesauce instead of the shortening, whole wheat flour, half a cup of frozen wild blueberries and half the salt. (Both times I used skim milk with no problem.) PERFECTO! The next time I am going to sprinke some sanding sugar on top for a little sweetness, as they are only mildly sweet. Oh, I only got ten muffins with both batches. I also recommend no liners; they will stick. I love these; a perfect quick breakfast.

Cousin David's Slow Cooker Brisket

This was so awesome -- wow. I did add some brown sugar, maybe 2 T. Just remember that you need to make the sauce to your liking before you start cooking. If you don't like it at the start, you probably won't like it at the end. Tweak it until you are happy. By nine hours on low, mine was spectacluar. If you think two bottles of the chili sauce will be too tart for you, use one bottle chili sauce and then maybe 12 oz tomato juice or plain tomato sauce. Tweak, tweak, tweak until it's perfect, *then* fire up the slow cooker! The sauce was sooo good sopped up with bread. Yummers!

King Cake in a Bread Machine

So simple but has great flavor and texture. I do not recommend cream cheese or fruit filling because I think it affects the texture a bit. Lovely dough and very easy to work with. Mine took an extra ten minutes in the oven but maybe that's because i used wetter fillings which i will not do again. I highly recommend this recipe.

Potato Casserole IV

Very good. I used two cans of the cream of chicken soup and left out the onions and butter and cornflakes. I can see how two cans of cream of cheddar soup would be great as well. I made a note on my recipe to add a splash of milk next time as well, because they were a tad too thick this time; I think a little more creaminess would be nice. I used shredded hash browns, so I think shredded rather than cubed cheese works better in that case. I wish the original recipe had specified whether to use the suqare or shredded potatoes, because I wasn't sure which. A nice way to make a big pan of potatoes without too much hassle. Easy to customize to your own personal taste: I could see throwing in some ham, etc. OH and you DO need BOTH the cans of the soup unless you want to add more sour cream. There are variations of this recipe that call for ONE can, but note the additional sour cream. PS Allow plenty of time to thaw those potatoes; it took much longer than I thought.

BAKER'S ONE BOWL Brownies

A very good GO-TO brownie. They are rich and soft inside, with a nice little crispiness on the top and sides. Nice and sweet. They were so gooey that they were difficult to cut. I baked mine in an 8X8 glass pan at 325 for I think it was about 50 minutes and they were perfect--I think they would be too short/flat in a 9x13. Expect to really like them, but they are not the BEST I have ever made. (But the best brownies I ever made were time consuming and the recipe had many steps. Not something I would make often.) I gave these brownies five stars because they are really good, really easy, people will like them, it's what you expect from a brownie, and I think the results are pretty consistent. These are the ones you whip up when the kids need two pans for school or someone has a sudden brownie craving, or you want a to send a pan over to the neighbors.

Baked Honey Mustard Chicken

It was very flavorful. I used dijon instead of yellow, which may have been why it was a really strong flavor. Very good, very distinctive. A sophisticated flavor for not much work at all.

Candied Garlic Chicken Wings

Excellent. Mine turned out exactly like the photo on the recipe page. I did add a generous splash of white vinegar to the marinade and it was still very sweet (in a good way). It was tender, fall off the bone dee-licious. One warning: WATCH them those last twenty minutes (during the dry bake) because the sugar will caramelize very quickly and you could end up with scorched chicken in the blink of an eye. I was multi-tasking and almost ruined them by not paying attention at the end--now I know better for next time. Otherwise my only complaint is that I wish I'd made more. I do recommend the splash of vinegar.

Buttermilk Oatmeal Muffins

Fabulous! Do not hesitate to make these. They are so soft--sometimes oatmeal muffins can be heavy and tough, but these are so moist you won't believe it. I felt naughty eating these becuase they are so moist and yummy, but then I reminded myelf that oats are good for you. Made them with white sugar and whole milk (same quantities) because that's what I had on hand, also added half a teaspoon of cinnamon to mix. I inhaled mine with no butter, and I am a butter kind of girl. I am going to throw in some blueberies next time. This recipe is staying on my bulletin board for use several times a week. Oh and my picky eater inhaled them as well. They were done in 16 minutes on the dot; made exactly one dozen muffins. PS I did sift my flour, that also may have contributed to the tenderness of the finished product. Cannot speak as to whether or not they keep well as I just made my batch less than one hour ago.

Awesome Slow Cooker Pot Roast

My husband really liked it. As recommended by other reviewers, I added half a pound of bacon pieces and the bacon fat to the pot. I also used cream of celery instead of the cream of mushroom, and I added a can of coca-cola for the liquid. I also used sirloin tips instead of pot roast, which my husband agreed he liked more. The bacon was nice, but it didn't really need it. It would have had a nice flavor without it. Made a nice thick gravy with some flour in a pot on the stove before serving. I did have a lot of gravy, but is there really such a thing as too much gravy? Nah! Overall very good, basic recipe that is easy to customize to your own flavor preferences.

Honey Bun Cake I

Another 5 star review here. Made recipe as written except used canned frosting on top--about 2/3 of a can of vanilla--and I let it melt on top while the cake was still warm. Awesome. Big hit at the office.

Creamy Chicken and Wild Rice Soup

AWESOME! Made it exactly as written except for one addition. For those of you who said this recipe was missing something ... try about two tablespoons of a powdered chicken soup base (not the paste) stirred in after you get it all mixed together. Can you mention brand names? I used the italian brand with a yellow and red label that starts with a P. I don't know if regular boullion cubes would work as well. For me, that gave it that really super extra delicious flavor. Otherwise, perfect recipe!
