Yummy Cube Steaks

This is the best recipe for cube steak that I've had, which is so nice since it's so easy to make and uses ingredients that are usually on hand. My husband even said that this should always be my go-to recipe for cube steak! I added garlic powder to the flour coating when browning the meat. After browned, I placed everything in a slow cooker and set on high for about 3.5 hours (I always have to prepare meals during my kids' naps, so slow cooker is the way to go for dinners!) I sauteed the zucchini/summer squash on the side, which was a good side dish, but I probably wouldn't put it on top, because the dish had enough flavor without it. Served on top of mashed potatoes--excellent.

Butter Cream Frosting II

This is the first time I have made any type of frosting, and it turned out perfectly for my son's bday cake. I used butter instead of margarine, and 1 tsp vanilla extract, 1/2 tsp almond extract. I also sifted the sugar. I made this the night before I decorated my son's cake, put it in the fridge overnight, and was then able to use it after about 20 minutes in room air with a pastry bag and tip (first time ever decorating a cake as well!). The frosting worked very well, held its shape, and tasted great, per everyone's review at the bday party! I would highly recommend this recipe and will be using it again.

Taco Quiche

I made this last night for dinner, and it was a hit! I used 1.5 green peppers (had to use them up), a red onion, and a can of corn in addition to the meat. Due to the amount of veggies, I doubled the baking mix/milk/egg part, but used 5 eggs instead of 4 based on other reviews. I ended up being able to make 2 9-inch pie plates and a 9x9 casserole pan of this quiche, which was a good thing--only half of the 9x9 casserole was left at the end! (I fed 3 adults, a 2-yr-old, and a 13 month old). Excellent with salsa on top. I will definitely be making this again!

Strawberry Swirl Cake

My family loves this cake! I got the recipe from a co-worker and made it for my husband's birthday last year. He now wants me to make it for his birthday every year! I use raspberries and raspberry jello instead of strawberries, and it's delicious. The frosting is a big hit because my husband doesn't like things that are too sweet, and the sour cream makes it just right. It is very important to grease/flour the pan very well, because the jello parts stick to the pan if there's not enough!! Enjoy!
