Oatmeal Chocolate Chip Bars

Everyone loved these, even picky non-oatmeal eaters. Used a mix of leftover chips: semi-sweet, butterscotch, milk. Butter - no shortening. Used sliced almonds in half/one side. Non-nut eaters didn't notice anyways...

Peanut Butter Bars I

Soooo good! I made it with 1 1/2 cups unsalted butter as suggested by others. Used milk chocolate chips (Callebaut - the best). I will definitely make these again, so many compliments. They are gooey but stay firm in the refrigerator.

Strawberry Refrigerator Cake

Yummy! Next time I will try one of the suggested variations. I'm not usually a fan of boxed mixes or cool whip but the fresh fruit makes it fabulous. I used fresh strawberries with added sugar, pureed using my immersion blender, when I poked the cake with the end of a wooden spoon the holes were big enough to let the fruit soak in. Used the cheesecake pudding made with 1 1/2 cups skim milk.

Delilah's Frosted Cut-Out Sugar Cookies

Wonderful recipe! Really tasty and perfect texture, firm shape yet soft when you bite into it. I used cherry extract for valentines day. Also, I divided the batter in half, one half had chopped maraschino cherry's, the other followed the recipe exactly. The cherry portion did not rise as well as the regular portion. It was worth a try...I'm sure the additional moisture threw the chemistry off.

Lemon Asparagus

Yummy, however, I micro'ed it for 5 minutes. Will try 4 next time as it was a bit over cooked for my taste. Even my kids ate it - begrudgingly- but still...i think they secretly liked it :p

Quick and Easy Sauteed Spinach

4 stars because fresh garlic is better. Sauteed garlic in oil, sprinkled with sea salt. Balsamic is critical!

Greek Pizza with Spinach, Feta and Olives

Surprisingly good! Was apprehensive about Mayo yet it added a nice tangy quality and balance to the garlic. I used Trader Joe's whole wheat pizza dough, baked it for 10 mins. first. Sautéed the onions in Olive oil with kosher salt for 10 mins, added the spinach and cooked until wilted.

This is very crumbly, I added 1 egg, still pretty loose and dry. Maybe needed another egg? Taste was great though. Some patties held together, some fell apart.

Lauren's Cincinnati Chili

I've tried several Cincinnati Chili recipes and this is the best! My friend said it was better than Skyline's, which is greasier. This is probably because I used a leaner beef and put the beef in a pot of cold water, brought to almost a boil, skimmed the foam and drained.
