Tomato Zucchini Casserole
This was really good and really easy. I used zukes from the farmer;s market and tomatoes from the garden. The bread crumbs were from bread I had made. It was even better as a leftover. My husband asked me to save this recipe. He really enjoyed it.

Chocolate Chip Coffee Cookies
My husband says these are the best chocolate chip cookies he has eaten. He no longer asks for his mother's recipe. I have used Kahlua and Starbuck's liqueur. I prefer the Starbuck's. It tastes richer in this. I also used a Bourbon-infused vanilla. I added Hershey's Special Dark Chips and I sub 1/2 wheat flour. My teenage daughter who has friends who tell her to text them when I bake these. For real.

Monster Cookies IV
I also ground up left over stale graham crackers in my food processor. I used M&m instead of chocolate bars because it is what I have. The addition of maple syrup was very interesting. It gave the sweetness of raisins without the texture which my kids are not a fan of. I used my KitchenAid stand mixer which began to buck when I added the chocolate and nuts. I switched to a dough hook and it stopped. I used the tablespoon cookie scoop and got 4.5 dozen cookies. I have a gas oven that runs slightly hot so I baked for 9 minutes. The cookies were a big hit with my kids and went viral over social media so I will have a stream of teenager coming by to eat my cookies.
