Boardwalk Quality Maple Walnut Fudge

Reviewed: Dec. 20, 2014
Loved this and so did my co-workers that I gifted it to. I do admit to halving the butter and doubling the maple extract because after tasting with only one teaspoon of extract it still tasted of vanilla-y white chocolate. (Perhaps my choice of white chocolate chips?) Very easy, will certainly make this again next year, if not sooner. Thanks, Shorecook, you've got a winner.

Rosemary Ranch Chicken Kabobs

Reviewed: Jun. 30, 2014
Couldn't be happier with this recipe. I used dried instead of fresh rosemary (one teaspoon dried = one tablespoon fresh) and omitted the option sugar. Had to broil as I'm grill-challenged but the chicken was very moist and tasty. Thanks, this will be a staple around here.

Asian Style Spicy Baked Beans

Reviewed: Jun. 29, 2014
Nice twist on canned beans. I didn't have any kind of chili peppers so had to leave those out. Served with Chef John's Turkey Burgers (from this site) and the two complimented each other quite well. Will certainly make these again. Thanks, Don.

Mediterranean Chicken with Mushrooms

Reviewed: May 3, 2014
Another winner here, Don. Made some minor subs based on what I had on hand. I used bone-in thighs since I was too lazy to de-bone and totally forgot the carrot. Had to use dried herbs, canned tomatoes and cooking onion (for the leek) since fresh is not available here yet. Despite subbing dried/canned ingredients for fresh this dish is delicious. The flavors came together wonderfully and the tiny bit of rosemary is just enough to add something special. Glad to be the first to review this one, it's a keeper. Thanks.

Don's Jalfrezi Style Chicken Curry

Reviewed: Apr. 8, 2014
Absolutely delicious. I added more chicken as did another reviewer and waited until time to serve to add the yogurt since I was afraid it would break. The seasonings were perfect, no need to change a thing. Thanks, Don, I'll be making this again.

Oven Roasted Parmesan Potatoes

Reviewed: Feb. 9, 2014
Tasty potato recipe. I used five small red potatoes cut in half and roasted them on a cookie sheet lined with parchment paper so no sticking. Quick and easy enough for every day yet good enough to serve guests. Thanks, belle, I'll be making these often.

Rosemary and Herb Roasted Chicken

Reviewed: Oct. 23, 2013
This was good. I used four thighs in place of the quarters (personal preference) and dried herbs. I reduced the amount of herbs and so was hit and miss as to quantity. The only thing keeping this from being 5-star is the fact that it needs to be cooked on a rack. The amount of oil/herb mixture is generous and could make for a greasy end result otherwise. Flavorwise a keeper for sure, will make again. Thanks.

Wedding Gift Spaghetti Sauce

Reviewed: Jul. 6, 2013
Absolutely delicious meat sauce. Omitted the butter as the olive oil was plenty to saute the onion and garlic. Simmered for 3-1/2 hours and had a thick, hearty sauce. The seasonings were spot on. Mushrooms would make a good addition, also. Thanks, Allison. RIP

Chef John's Turkey Burger

Reviewed: Jul. 5, 2013
Excellent turkey burgers. Omitted the cilantro (don't like it) and ground almonds (didn't have any) and used crushed pork rinds in place of the bread crumbs. Can't have too many burger recipes and this one is a keeper for sure. Thanks, Chef John.

Spicy Black Bean Salad

Reviewed: May 8, 2013
This is a decent recipe as written. The dressing is very good (I cut the oil in half and used lime instead of lemon juice) However next time I will add fresh chopped bell pepper and tomato and omit the salsa. The salsa seemed to overpower the taste of the dressing. If time allows, marinate as long as possible. Thanks, this is a keeper for sure.

Lemon Chicken with Broccoli

Reviewed: May 2, 2013
We found this to be just OK. I used BLSL breasts cut in strips. It was easy enough but just not very flavorful. There are better Lemon Chicken recipes out there. Thanks for the recipe but I'm not likely to make this one again.

Sea Bass Cuban Style

Reviewed: Mar. 30, 2013
This was pretty good. I did use cod as sea bass is not available here (and I wouldn't be able to afford it if it was). I also halved the sauce and used fresh tomatoes. The only thing keeping this recipe from getting 5 stars was the fact it took WAY longer to reduce the sauce, at least 30 minutes. BF and I both enjoyed this and I will make it again. Thanks

Southern-Style Barbecue Sauce

Reviewed: Mar. 27, 2013
This is very good. I used it last night on chicken and BF said it was better than the BBQ sauce I usually make. Very easy to make also. A keeper for sure, thanks.

Corn, Sausage and Pepper Chowder

Reviewed: Oct. 21, 2012
I liked this. I rendered the sausage (I think this should be 14 ounces) first to get some of the grease out and completely forgot to buy peppers so I had to leave them out. I couldn't even taste the tiny bit of cumin so instead of adding more I added some Old Bay seasoning as another reviewer suggested. Also didn't bother with pureeing the corn and it was still thick enough for me. A keeper that will be made again. Thank you Molson7.

Cuban-Style Picadillo

Reviewed: Oct. 7, 2012
I halved the recipe to use 3/4 pound of ground beef. I nuked the potato to save dirtying a pan, used white wine instead of red and doubled up on the olives (we like our olives). Never having eaten picadillo before I wasn't sure what to expect. After it simmered for a bit I ended up doubling the cumin and oregano and will probably double the potato next time as well. (I liked the idea of frying the potatoes before adding so they wouldn't get mushy) A tasty dish, definitely different from our usual. Thanks, lutzflcat, I will make this again.

Tangy Potato, Green Bean and Bacon Salad

Reviewed: Sep. 23, 2012
I made this for the second time last night. The first time, I didn't have any wholegrain mustard so I used dijon. It was good. The second time, I used a good deli wholegrain mustard. It was great. It may seem like a subtle change but the mustard made all the difference. Please do yourselves a favor and use the wholegrain mustard. I'll certainly be making this many, many more times. Thanks, Don.

Broccoli Salad

Reviewed: May 28, 2012
This is very good. The only changes I made were to use one 14 oz bag of frozen broccoli florets that I blanched to brighten the color, omit the onion (BF is not a fan of raw onion), cut the sugar (Splenda in my case) back to 2 teaspoons and add a handful of sunflower seeds. Simple and tasty, this will definitely be made again. Thanks for the recipe.

Southwestern Meat Loaf

Reviewed: Mar. 3, 2012
What a great twist on meatloaf. I had to omit the green onion since I didn't have any and only ended up with half of the required crushed tortilla chips but this was very good. I will definitely be making this again, thanks.

Coconut Crust

Reviewed: Dec. 26, 2011
I made this with un-sweetened, dried coconut that I reconstituted with warm water. Toyed with the idea of adding splenda but ended up not. It complimented my pineapple pie perfectly. Next time though I will not reconstitute the coconut as my crust did not get as brown and crispy as I would have liked.
