Zucchini Cakes

I took these to a dinner, fried them up on the stove there and served piping hot - they were very tasty and we all agreed we would make them again. I omitted the onion for personal preference and added in garlic instead. I think the addition of Parmesan cheese in this recipe would be very good, too. I also plan on trying to bake the patties, and will roll in crumbs and then lightly spray w/my olive oil sprayer and then bake to see how that works. All in all, a very nice recipes, thanks!

Queenie's Killer Tomato Bagel Sandwich

I serve this sandwich for breakfast at my B&B while fresh tomatoes are available - it's always well received! It's best warm when the cream cheese is slightly softer, but is just fine made ahead and set under a glass dome to keep them fresh. I usually use the miniature bagels and place 6-8 of them on a tray - it's attractive on the table and even better eating!

Grandmother's Buttermilk Cornbread

This is great cornbread - moist, not too sweet, and paired well with a green chile strata for breakfast at the B&B. I will definitely be using this recipe again! I do think you could cut down on the butter a bit and substitute something less fattening if you want to without any problem, but I haven't tried that yet.

Cinnamon Swirl Bread

Very good batter bread. It's better after it sits in the refrigerator for a day or two (even three). I preferred the texture of the bread after a few days - the flavor is great! If you refrigerate it, let it come to room temperature before serving it. I'll be making this regularly for my B&B.

Banana Coffee Cake

This is a great coffee cake! I served it to my B&B guests last week to good reviews. The cake has a moist crumb with more texture than a normal cake. This week I used 2 blackened bananas (which came out to a little more than 1 C) and decided to use the streusel topping from "Amazing Pecan Coffee Cake" on this site. With these 2 changes it is a 5-star cake in my book - I got rave reviews from my guests this week!

Coffee Shop Corn Muffins

Orange Pecan French Toast

I served this to guests at my B&B this past weekend - they loved it. I found it a bit too sweet, hence the 4-star rating. I will serve it again, but cut down on the sugar. The orange flavor is very nice, though! Thanks for a good recipe.

Orange Raisin Cake

This is a GREAT cake - very moist, very flavorful and a crowd pleaser! I think you could easily serve this as a coffee cake with a crumb topping for breakfast. I frosted it with cream cheese icing for a birthday party and had compliments galore (a nice change from carrot cake was a frequent comment). This would also make great muffins w/ streusel topping - so many options! I plan to make this a lot at my B&B - thanks so much for a wonderful recipe!

Bacon Cheese Muffins

A nice change from the normal sweet breakfast muffin. I didn't have bacon, so used chopped ham instead, and shredded sharp white cheddar cheese. I took a few recommendations of other reviewers and used a little more spice - they were well received at the B&B. These will be on the regular rotation w/the noted changes (without the additional spices, I think they would have been a bit bland). I plan on trying the bacon - that sounds tasty!

I enjoyed these, as did my colleagues at work. They are better fresh than making them at night and eating the next day (as are many muffin recipes). I will make them again. (oh, I did use 1/2 t of nutmeg)

Cherry Chocolate Cake

This is a great cake. I have made the cake mix version of this cake several times over the years, but tired of it. I decided to try this, as I can control the amount of sugar in it, and wow, it is noticeably better! I used no-added sugar pie filling, reduced the sugar in the cake to 1C. Rather than using butter cream icing, I used a thick chocolate glaze made from bittersweet chocolate chips - it was delicious, and keeps well, just as the author says. I highly recommend this cake with a glaze!

Cheesy Green Chili Rice

I made this as a side dish to the Pork Chalupas recipe on this site. Although my friends liked it, I found it relatively bland. For the amount of cholesterol in this dish, it didn't taste good enough to counter the guilty feelings of ingesting so much fat. I probably won't make this again.

This recipe is great! It does feed a crowd (I had 12 and there was still plenty left over for lunch for a few days), and has lots of flavor. It was great served the next day over Spanish rice - like a 2nd meal from the same pot!

Chocolate Oat Snack Cake

I usually make the original recipe the first time, but could tell this recipe would lend itself to a few changes to reduce sugar and fat, and it did! I used 1/4 C butter and 1/2 C low fat plain yogurt and the only other change I made was 1 C brown sugar and 3/4 C Stevia (by the cup). I made chocolate muffins w/these changes and they were wonderful! They are dense and filling - and now that I've made them a few times, I use mini-chocolate chips (a cup) mixed into the batter, add in a cup of raisins, and use 1/2 C of cocoa. This is now my favorite breakfast treat! Thanks for a great recipe!

Chocolate Covered Orange Balls

I liked these very much, although I'm not so sure my friends and B&B guests did. This recipe makes A LOT so be prepared to have a lot of time to make them and get them dipped and set (if you want to do it all at the same time). I do suggest having the paper candy cups (buy them at Michael's) ready for a nice presentation. All in all, I will make these again, but won't do it every year, too time consuming.

Chewy Chocolate Cookies I

I made the cookies as stated and they're great! I then decided to try to reduce the calories and did this: replaced 1/2 cup butter w/seedless, sugarless raspberry jam, and half the sugar with stevia by the cup. All the other ingredients were unchanged - except used white chocolate chips. Wow, they were fabulous cookies. This is an all around great recipe - versatile but great as is, too. I'll be using this a lot in the future.
