Tomato Bacon Squares

We enjoyed this last night - I didn't have dried basil so we added freshly cut basil into the mayonnaise along with the garlic. We ate it like pizza and will make it again (probably with more bacon and continue to use fresh basil). This recipe allows lots of room for substitutions - which is very nice!

Chocolate Zucchini Cake III

I've made this cake a number of times now - and as written it is a bit oily in my opinion. I now use 1/2 cup oil and 1/2 cup unsweetened applesauce in place of the 1 1/2 cup of oil and it is still very moist. We don't like nuts in our cake, so we substitute chocolate chips. It makes a large bundt cake - an excellent cake with the noted substitutions (that many reviewers have already noted). This is my go-to chocolate cake recipe in the summer when I'm using up zucchini!

Scalloped Corn

I made this on a lark for a summer dinner with fresh garden veggies and this as the sole hot dish. I didn't have the corn muffin mix, so I followed the recipe except for making my own mix (using a recipe on this site for a dozen corn muffins - all the dry ingredients, only). I'm glad I made it and will plan on making it again - it was really yummy! A great way to use leftover fresh corn, too!

Chili 'N' Cheese Grits

I have to say, I made these grits for the B&B because I needed a breakfast side dish and had all the ingredients. I wasn't really that excited about the recipe itself, but excited that I didn't have to run out to the store at the last minute one morning. However, when there wasn't a single spoonful for me to try afterwards, I knew this had to be good. I made this 3x before I actually got to have some myself - they are wonderful! I was able to accommodate a guest with an egg allergy by substituting ground flax seed and oil for the egg yolks, and it was still great. This is comfort food at it's best!

Classic Spanish Sangria

I've tried many of the sangria recipes on this site, and I have to say, this is by far the best red sangria recipe I've tried from ANY recipe site. So many of the reviews suggested reducing the rum by half and starting there (adding more if desired) so I did make that change, and I'm glad I did. I will also add a little less sugar next time (I think a quarter cup would be fine), but wow, this is fabulous!! Since the changes I made were purely my personal preference, I still feel this is a 5-star recipe, and I plan to use this as my go-to sangria recipe from now on.

Blueberry Sauce

This really is delicious. The only thing I plan to do when I make it again this summer, is add some more blueberries. Great on the baked pancake squares on this site - my B&B guests all loved it this morning! Thanks for the post.

Scalloped Pineapple

I love this dish, and serve it to my B&B guests for breakfast. However, after baking it the original way many times, I have found you can do the following with equally good results and not so many calories: replace 1 C butter with 1/4 C butter and 3/4 C low fat buttermilk; I use plain almond milk (no sugar) for the milk, and use 1 C sugar rather than 2 cups. With these changes you've eliminated >500 calories by replacing the butter and 775 calories by eliminating a cup of sugar. The dish is still sweet and you don't have to feel so guilty about eating it. Oh, I did increase the bread by 3-4 slices to soak up the extra buttermilk. Enjoy!

No Bake Chocolate Oat Bars

These are good bar cookies, but not fabulous. They can use less butter ( I followed the recipe exactly and there was butter not soaked up by the oats). I agree with others that you can reduce the butter by at least a quarter cup if not a bit more. Also, to make them look like the photo, I think you probably have to make them in an 8x8 (mine were much thinner in a 9x9). At any rate, not sure I'll make them again, but it was worth a try! Addendum: I have to increase this score to 4 stars, all my friends seem to like these very much, so in all fairness, I am giving them more stars than I initially noted.

Farmer's Casserole

This was delicious! I forgot to buy the pepperjack cheese, so had to use sharp cheddar, but I was very happy with the result (so were my B&B guests). This will be a regular weekend breakfast item! I used Bob Evans potatoes (in the refrigerated section) and because they are already seasoned, I didn't add the salt. Glad I didn't since the potatoes already had plenty of salt for the entire dish. Thanks for the post!

Baked Apple-Pecan Maple Pancakes

I experimented on my B&B guests with this recipe (which I don't usually do....). I followed the recipe first, and the feedback was good. I then followed some reviewers suggestions and did the following: used 1.5 C of finely chopped apple, sprinkled 2 T of brown sugar over melted butter and mixed well and then spread the butter out evenly in bottom of pie plate, mixed the apples/cinnamon/4 T maple syrup well before spooning over butter mixture. I made the pancake batter with low fat buttermilk rather than plain milk. I baked for approx 25 mins and then inverted over plate. The next batch of guests all loved this - thanks for the recipe and the suggestions!

Almond Rhubarb Coffee Cake

I would personally give this 3 starts, but all of my B&B guests said they liked it (no one took seconds though). I think it needs twice as much rhubarb, and I would toast the almonds before using. I followed the recipe exactly as stated except I made it in a 10 cup bundt pan (put the streusel on the bottom of the pan). It looked lovely and smelled great - it just didn't have that much flavor, which surprised me. Oh well, will try another.....

Classic Bran Muffins

I had raisin bran to use up and tried this recipe. I liked it and so did my guests, but I didn't think it was really a 5-star recipe. I plan on making it again since I frequently have small portions of cereal left at my B&B, but will add cinnamon and ginger into it for a little more flavor. This recipe is very easy to make and very moist, so it's definitely worth adjusting for future use.

Peanut Noodles

We liked this - took it to a potluck and most people liked it a lot. I thougth the vinegar was a little strong, and would use rice vinegar next time rather than cider vinegar. All-in-all a good recipe, and I'll make it again, thanks for the posting!

Orange Cake

I usually make the recipe as printed to review, however, I needed an orange cake and many of the reviews said that this tasted more like a lemon cake, although everyone seemed to like it a lot. So, I simply took out all the lemon flavored things and replaced with vanilla pudding mix and orange extract as many other reviewers noted. The glaze is particularly good, and I plan on using it for other baked goods. My dinner guests exclaimed over the cake with the 2 changes noted above - it was very well received. It is quite sweet, so I served it with fresh whipped cream, but did not sweeten the cream.

Baked Garlic Parmesan Chicken

This was good; I read through lots of reviews and decided to increase the spices and garlic since we like things with lots of flavor (and many reviews suggested doing this). With spices doubled, it was very good and I will definitely make it again.

Baked Fettucheesy

This is an easy way to serve fettuccine for dinner if you are having guests and want to make it ahead of time. I made mine in the morning and refrigerated until 30 mins before baking. I let it sit on the counter for 30 mins and then baked it for 45-50 mins. I liked it, and all my guests did, too. It was a tiny bit dry so next time I plan on increasing the sauce a bit.

Blueberry Pound Cake

I'm finally getting around to rating this recipe. I've used it numerous times, and have always liked it. Then I noticed another recipe on this site; Blueberry Sour Cream Pound Cake. After reading through the ingredients, it's basically this cake with a cup of sour cream added in and different extracts. So, I added a cup of sour cream, a teaspoon of almond extract, and extra blueberries since I had 2 cups and didn't want to waste any. Wow, it's noticeably better this way - a combo of the 2 recipes. YUM.

Cranberry White Chocolate Shortbread

I actually got this recipe from a friend - have always loved them at her annual Christmas party but never had the recipe. These are simply delicious - I made 3 batches for the holidays and plan to make some more this winter. You can substitute any type of chocolate chip and any dried fruit to change up the cookies. This is one of my favorite cookie recipes!
