Baked Apple-Pecan Maple Pancakes
I experimented on my B&B guests with this recipe (which I don't usually do....). I followed the recipe first, and the feedback was good. I then followed some reviewers suggestions and did the following: used 1.5 C of finely chopped apple, sprinkled 2 T of brown sugar over melted butter and mixed well and then spread the butter out evenly in bottom of pie plate, mixed the apples/cinnamon/4 T maple syrup well before spooning over butter mixture. I made the pancake batter with low fat buttermilk rather than plain milk. I baked for approx 25 mins and then inverted over plate. The next batch of guests all loved this - thanks for the recipe and the suggestions!

Almond Rhubarb Coffee Cake
I would personally give this 3 starts, but all of my B&B guests said they liked it (no one took seconds though). I think it needs twice as much rhubarb, and I would toast the almonds before using. I followed the recipe exactly as stated except I made it in a 10 cup bundt pan (put the streusel on the bottom of the pan). It looked lovely and smelled great - it just didn't have that much flavor, which surprised me. Oh well, will try another.....

Classic Bran Muffins
I had raisin bran to use up and tried this recipe. I liked it and so did my guests, but I didn't think it was really a 5-star recipe. I plan on making it again since I frequently have small portions of cereal left at my B&B, but will add cinnamon and ginger into it for a little more flavor. This recipe is very easy to make and very moist, so it's definitely worth adjusting for future use.
