Roasted Sweet Potato Corn Chowder

Very tasty, perfect for fall! I blended mine partly with a hand blender, as I like my flavours to mingle. I agree it could use a little kick - I might add some red pepper flakes next time.

Mushroom Saute

Love it! I'm usually hit or miss with mushrooms, but have made this multiple times already (the boy loved it too). Excellent seasoning, goes well with rice. I served with some lemon/garlic kale.

Grilled Sweet Potatoes with Apples

Very yummy, but quite sweet (needs to be paired with something savoury). I replaced the white sugar with raw cane sugar or brown sugar, and used a peach as well that needed to be used.

Peanut Butter Noodles

Yum! Make vegan by replacing honey with agave nectar. I added chick peas, sunflower seeds, and some flax (for extra post-workout protein and a nutritional boost). Tasted great on regular pasta. The meat-eating boy loved it, and didn't miss a thing! Curry paste or chili powder can provide the kick if you don't have chili paste.
