Peppermint Meringue Cookies

This is a good idea for a recipe. I made the meringues smaller so as to get the 50 servings. I felt like 225 for 90 minutes was too much so I lowered the temperature to 210 and took the cookies out about 15 minutes early and boy am I glad I did. The cookies were already tanned in color and had a hint of a burnt taste. I will make these again but I will have to lower the temp to 200 and start checking on them before an hour. I think the smaller size was actually a plus as it allows the cookies to be crisp all the way through, and with a little adjustment on the cooking temp and time I hope they will be a winner!

Slow Cooker Pulled Pork

I followed directions, but the root beer honestly does not give the pork a very good flavor. I was surprised because it got so many great reviews. You couldn't taste the other spices because the root beer was so overpowering. I didn't care for this recipe and wish I would've just cooked the pork in a broth or pineapple juice like I typically do.

Apricot-Glazed Pork Chops

I made this last night. I used sparkling cidar instead of the wine. After trying the sauce on its own I found it to be a little bland for my tastes, so added a dash of garlic salt and a few pinches of brown sugar which seemed to round out the sauce nicely!

Golden State Mushroom Soup

Have tried this recipe twice now. Once with regular sour cream and once with non-fat sour cream. While the non-fat still came out pretty good, I recommend splurging on regular. Delightful, maybe the best soup I've ever had.

Kalua Pig in a Slow Cooker

Extremely tasty! Try this... Add a cup of pineapple juice as well as a splash of soy sauce to help with the flavor, (please try this instead of using bbq sauce which defeats the purpose of making Kalua pork). Also add sauteed some cabbage sauteed in soy sauce to shredded pork. I served with a cold macaroni salad (a simple hawaiian version) Cook 1/2 lb macaroni the rince with cold water. Add 1 cup best foods mayo, 1 finely shredded carrot and 1 cup finely shredded chicken breast Paired on the side of the pork and cabbage over white rice, its delicious and seems to cut the saltiness of the dish. Yum yum!

Chicken and Rice

Was looking for a way to use canned chicken I had left over, and this was quick and simple. I only used 1 cup of rice because that's all I had but I added 1 cup of broccoli, some onion powder, garlic salt, and pepper and it turned out great. Like other reviewers mentioned, this is a simple, semi-healthy meal that takes about 10 min to make and you can customize it to your tastes. A good recipe to keep on hand for nights when you just want to throw a few things in a pot.

Country Apple Dumplings

Used butter crescent rolls and macintosh apples. The butter flavored rolls were a great choice! Macintosh apples turned out a little softer than I assume granny smiths would have, but they were still delicious!
