Awesome Ham Pasta Salad

My husband and I LOVE this pasta salad, it is a weekly staple in our fridge. We like to use baby dill pickles since we aren't cazy about sweet pickles. Other adjustments are, lite mayo and sour cream, au ju mix instead of boullion, red wine vinegar, 1 full pound of smoked ham,whole wheat mini pasta (so you don't have to use as much) and an extra garlic clove. I usually just throw in whatever peppers I have around and my deli counter knows to cut REALLY thick slices of ham when they see me coming. Thanks for the great recipe!

Pork Chops Stuffed with Smoked Gouda and Bacon

These pork chops were very tasty. I used pancetta instead of bacon since I had it on hand and added some chopped chives and grated garlic to the mix. The chops seemed to be extra juicy and flavorful.

Chicken Noodle Casserole I

This Casserole was pretty good. I used double the egg noodles (whole wheat) and I cut up the chicken and cooked it in a skillet with 8oz of sliced mushrooms and an onion. I also added a can of cream of celery soup and 2 cups of defrosted frozen broccoli. I seasoned the whole thing with Emeril's essence (as common as s&p in our house. Before puting it in the casserole dish I added a bag of shredded cheddar to the mix. We chose not to do the crackers on top since we don't care for them much. Baked at 350 for 45 minutes. Overall I thought it was pretty good and very easy. My husband loved it.

Buffalo Chicken Dip

This is amazing! After reading the other reviews here are the changes I made. I boiled 3 boneless chicken breasts and shredded them. In a saucepan I combined 3/4 cup of Ranch and 3/4 cup Blue Cheese with 8oz of Cream Cheese. In a skillet I melted 3 tbs of butter and cooked the chicken in it for a few minutes. I then added 1/2 cup of Red Hot and 1/2 cup of Red Hot Wing Sauce. Once the chicken and hot sauce were combined I poured it in with the dressing and cream cheese mixture. I didn't see a need to bake this or layer it. It was great mixed together. We ate this with tortilla chips and fritos. I will make this one over and over again!

Firecracker Grilled Alaska Salmon

This was really good. I didn't add the brown sugar since my husband doesn't like the savory/sweet combo. I let the fish marinade over night and I baked it for 20 minutes at 425. It was perfect and very yummy! Thanks!

Angel Shrimp Pasta

This was really tasty. The only changes I made were to use regular Velveeta and add 1 can of rotel, 2 tablespoons of both chili powder and cumin.

Acapulco Chicken

This was pretty good, not our favorite though. I felt like it was missing something, possibly a sauce. I did use canned diced tomatoes instead of a fresh one and served it over rice.

Bacon Cheddar Chive Muffins

These had great flavor! I have to say though that these are very time consuming to make (longer than the 15 minutes stated) so I most likely won't add them to my regulars. I would reccomed warming any leftovers before you eat them to get the most flavor out of them!

Breakfast Pita Pockets

These were easy to prepare and super easy to grab and go. I prepped enough filling for a couple of days so all I had to do was warm up some and stuff it in the pita. I added a wedge of Laughing Cow Cheese and some fresh chives to mine. I also substitued turkey sausage or sliced deli turkey to make it a little leaner. I will keep this one on my list.

Creamed Chipped Beef On Toast

When I made the recipe as is it was extremely bland. I didn't rinse the dried beef and I am glad i didn't because even with my additions afterwards the salt was perfect. To add flavor to this I used Worchestire sauce, A1 and hot sauce instead of dried cayenne. With these additions it added the much needed flavor

Ambrosia Salad II

Yummy! I used chunked pineapple, omitted the bananas and pecans added halved grapes and reduced the whipped topping to 8oz. I also added some of the fruit juice. The only thing I might do differently next time is reduce the amount of coconut so the texture isn't so overwhelming.

So good, I let the chicken sit overnight in the marinade and I think it added a lot of flavor. I would suggest adding some pepper to the chicken when cooking it (no salt is needed).

Quick Lemon Poppy Seed Bread

Really good, I added the zest from one lemon and cut back on the poppy seeds. It took almost 40 minutes for mine to bake. I made a glaze from lemon juice and powdered sugar but I think the bread/cake would be just fine without it. This will be in my kitchen for years to come!
