Ashley's Chicken Katsu with Tonkatsu Sauce

The chicken is really good. I made my strips a little thicker so they could get really golden without over cooking. I added hot sauce to the eggs, garlic and onion powder, chives and cajun seasoning to both the flour and panko. I cooked these in my cast iron skillet that I filled about half an inch up with vegetable oil. I didn't use the recipe for the sauce instead I used another from this site.

New Year's Day Black-Eyed Peas

These are quite tasty but I do have a few changes. I like my peas to be an almost creamy texture so I omitted the tomatoes. I used one ham hock that I made several cuts into, half a link of smoked sausage, one onion, garlic powder, onion powder, chile sauce and chicken broth as the liquid. I let these simmer for a couple of hours and OH MY they are good!

Stuffed Cabbage

This is a good basic stuffed cabbage. I didn't pre cook the rice at all. Also, to make it a little easier I used jarred marinara sauce and it was just as good.

This is so good! The only additions I made were some parsley and chives. Such an easy and elegant looking quiche. I think I might try adding a few asparagus spears next time.

White Chocolate Party Mix

Soooo yummy! I used Rice Chex, Regular Cheerios, Pretzels, Lightly Salted Peanuts and Mini M&Ms. I melted one bag of white chocolate chips and combined it with all of the ingredients, this stuff is so addictive and sooooo good!

This is soooo good! I the recipe exactly and think next time I will substitute the oil for apple sauce and maybe bump up the pumpkin and cinnamon. Even without these changes this bread is quite tasty!

Meatball Lasagna

This is a great recipe! I was running low on canned tomatoes so used 1 can of diced, 1 can of sauce, 1 can of paste and then add a jar of my favorite spaghetti sauce. I pretty much followed the recipe as written but I used no bake lasagna just for the ease of it. I also baked this in 2 8x8 pans so I could freeze one. This is soooooo yummy! Will for sure make again and again.

Italian Wedding Soup I

Ok, lots of changes for this one. I made the meatballs ahead of time. I used 1lb ground turkey, dried parsley, oregano, basil and chives, grill season, garlic, eggs, and panko bread crumbs. I rolled these really tiny and baked them at 350 for 20 minutes. This makes a ton and I froze half of them for future use. When I made the soup I chopped and sauteed 2 carrots, 2 stalks of celery, 4 cloves of garlic and 1 onion used 6 cups of chicken stock and 1 cup of beef broth and added 2 bay leaves. I used 2 10oz boxes of defrosted spinach and let the soup simmer together for almost a hour before I let it cool. I also made the orzo separate and added it as I ate the soup. This is really good, much better than the canned stuff(I have tried them all!) Thanks!

Chicken Florentine Casserole

This was ok. I tried to simplify it as much as possible. I used frozen and thawed spinach that I mixed with sauteed mushrooms and seasoned with garlic salt and garlic powder. I cooked bacon in a skillet and set aside then cooked cubed chicken and 3 cloves of garlic in the same skillet. For the sauce I omitted the wine and used roasted garlic cream of mushroom soup, I also used milk instead of 1/2 and 1/2. I layered the chicken over the spinach and then the soup mix. I topped with the cheese and bacon covered and backed for 30 min at 350 and then uncovered and baked for another 15 min. It was decent but I won't make again.

Quick Lemon Poppy Seed Bread

Really good, I added the zest from one lemon and cut back on the poppy seeds. It took almost 40 minutes for mine to bake. I made a glaze from lemon juice and powdered sugar but I think the bread/cake would be just fine without it. This will be in my kitchen for years to come!
