I was laid off in April 2008 and have been home with my two boys (which is great!) This has given me a chance to get back in the kitchen and whip up some yummy dinners and desserts! My daily challenge is trying to create something that my 11 month old, 3 year old and husband will all eat. My husband won't eat mushrooms, onions, lettuce or broccoli and the little ones can't eat anything too spicy, so I feel a little bit limited in what I make. It's definitely a challenge! I really love to make desserts- pies, muffins, cookies, cakes, etc...they are so comforting and yummy!
My favorite family cooking traditions
"Wendy Dip" (a special taco dip named after my aunt) and Special K bars are big family favorites for get-togethers. My husband's family favorites include goulash, scalloped potatoes and wieners and mock chow mein.
My cooking triumphs
An excellent beef stew I whipped up with whatever I had in the kitchen and a superb fried chicken breast with cheddar garlic mashed potatoes
My cooking tragedies
Scalloped potatoes and wieners (MIL "recipe") that basically ended up like a cheesy potato and hot dog soup - uff da. And mashed potatoes that I thought I would just put in the food processor- DON'T DO IT!!! It was like potato paste- YUCK! My son (3 yrs) kept calling it potato yogurt. We pretty much just spread it on our chicken breasts and ate some of it anyway- hey, it still had great flavor!
