Turkey Brine

Reviewed: Oct. 6, 2012
I made this last night and it was incredible! I was told by two of the women guests that it was the best turkey they had ever had!!!! The only thing I changed was to add 1 litre of apple juice and vegetable stock since I only had one box of the vegetable stock at home. I also added fresh sage, fresh chives, fresh tarragon, fresh savory and fresh tyme as I have a herb garden that needed to be harvested. I will definitely do this again and again!!!!!

Unbelievable Chicken

Reviewed: May 30, 2009
Had no lime so I just used extra lemon juice and it was excellent!!!! I had bought some really grainy mustard as well I used a BBQ cipote mango chicken seasoning while grilling and constantly brushing the chicken with the marininade and that is what really made it great! I will definitely do this recipe again for a huge BBQ as it was so tender and perfect!

Raspberry and Almond Shortbread Thumbprints

Reviewed: Apr. 24, 2009
Excellent, used the advice of others and rolled the balls the circumference of a quarter then used the top of a chapstick container to form the indent in the middle to put the jam in. I used blackberry jam and it was wonderful!!!

Flourless Peanut Butter Cookies

Reviewed: Apr. 3, 2009
I enjoyed this recipe as I needed a celiac-friendly cookie! I took the advice of another reader and added vanilla and baking powder to them. I had tripled the recipe so for sugar I split the amount equally with brown sugar, white sugar and icing sugar so they would not be so granular as another reader had mentioned. I also put some butterscotch chips in to make them interesting. Turned out great!

Took the advice that was in the reviews and cut the soya sauce in half. Marinated it overnight, turned out great and my dinner guests were very impressed. Definitely will be saving this recipe!

excellent! I added some coconut syrup that I had from a recent trip to Maui instead of the sugar, wonderful and my dinner guests raved about it!

Asian Salmon

Reviewed: Feb. 22, 2009
It was okay, but I found it too oily. Maybe I should have followed some of the substitutions that were mentioned in the reviews. I will try it again with some of the readers suggestions.

Chicken a la King I

Reviewed: Feb. 22, 2009
Excellent recipe but I did do a change and I hope it helps others, I did substitute leftover1 cup of chicken gravy for the 1/2 cup of butter, saute'ed carrots instead of the red peppers as I did not have any, added 1/2 cup of sherry added frozen peas and green onion at the last minute. The result was fantastic. I served it over three colored rotini noodles and a side of spinach salad, and spanikopita and dilled fresh tomatoes. The dinner party was a hit.

Spinach Stuffed Chicken Breasts

Reviewed: Feb. 19, 2009
I liked this recipe but found the chicken a little dry. I did not have mayo so I used tziki sauce and found it gave this a nice greek flavor. I had trouble keeping the stuffing from oozing out, there was more stuffing than chicken so I used it in a pasta dish with the dinner. This turned out well, I would buy fresh chicken breasts that are large in order to stuff these better and would keep an eye on the cooking time to improve the result. I would make this again though.
