Cheese Sauce for Broccoli and Cauliflower

Reviewed: Jun. 12, 2014
Perfect easy peasy recipe that is quite forgiving of harried mums whether you have time to measure, or maybe don't when you have a family that decides they want cheese sauce right when the rest of dinner is ready to be served :)

Yogurt Chicken

Reviewed: Jun. 12, 2014
I think this is one of the yummiest chicken recipes ever! My family loves it and I find I look forward to making it again, and make it often! I make a lot of recipes with my teenaged daughter and we both enjoy cooking this one too (fun). I found the reviews very helpful. If I remember, I marinate the chicken in the yoghurt mixture ahead of time..I poke holes in the chicken with a knife too before putting in the yoghurt mixture. It's still delicious even if you don't have time to marinate first. I also took Martha's advice to put the chicken on a cooling rack coated lightly with cooking spray instead of right on the bottom of a pan (though I still put a tiny bit o' butter on top), and it did make a big difference. The chicken did end up nice and crunchy all over. For the breadcrumbs, we make our own the old fashioned way..break up bread I've saved and manually crush it into tiny pieces (not fine crumbs but tiny bits) then we season it. I think it might contribute to why our coating turns out so lovely (not sure). This recipe is a winner ..the lemony yoghurt is such a great flavor, and this one is definitely a part of my family's regular rotation now!

Honey and Ginger Chicken

Reviewed: Jun. 11, 2014
My family liked this recipe but I think we would have liked it more with a bit less ginger and honey (maybe because I didn't have as many veggies though) Also, next time, I think I'll try browning the the chicken first to make it a bit crispy on the outside before adding honey. I had run out of broccoli so added sliced carrots and extra red peppers.

Honey Fried Chicken

Reviewed: Oct. 10, 2008
I just loved making these..I do a lot of cooking with my daughter just for the fun of it..interesting and different recipes like this where you get a unique and tasty result tend to be the ones we pick most often. If its challenging for my cooking skills, its even more fun (even if I fail utterly lol) Anyway, I did have some trouble at first because I'm not used to frying with anything covered in honey (despite being warned here lol!)...this is actually what caught my eye was the challenges from coating/deep frying honey. I used frozen boneless chicken breasts that were large so I cut them into three pieces each. My first few got SO dark SO fast that even after being warned by the other reviewers, I was still astonished lol, and the middles weren't cooked yet even. But then I tried a couple things the other people here suggested...for the rest of mine (after the really dark ones I messed up), I only did two at a time and turned them VERY often..I mean almost CONSTANTLY until the outsides were a nice brown color, without worrying about the middles because I decided to finish them all off in the oven. The rest, doing this, turned out wonderfully! Especially when you know you're going to bake the insides anyway so you don't have to worry so much about them getting too dark in the oil before the middles are done. Anyway they were fun and interesting to make..I also didn't have any trouble at all with the honey sliding off before coating because I dried the chicken beforehand l

Really fun! We also tried out the octopus version - my daughter found it hilarious the way the legs curl up in the water. Really easy dinner for kids :)

Corn Fritters

Reviewed: Oct. 8, 2008
I get recipes from here to make for dinner with my children (there's three of them and myself), so we're always trying to find something yummy yet fun and different than our usual meals. I've never made corn fritters before - these were SO fun for my daughter and I to make and they turned out wonderful! All crispy on the outside and soft inside, not greasy at all, with a lovely sweetness - not too much yet it was there. We used the 1/4 cup sugar another person suggested, thinking the extra bit of sweetness would go over well around here lol. We served them on a big plate for all the kids with bacon slices, fruit with a choice of honey, syrup or ketchup to dip and they looked like they were racing each other to see who could gobble up the most! Thanks so much for such a fun and delicious recipe! We'll definitely be making these often :)
