Provolone Burgers

This is a good recipe, but I found using the chopped onion/garlic really overpowered the flavor of the meat for my taste. Next time, I will use garlic/onion powder instead. Also, I did not have an egg, so I just omitted it and the burgers were still fine. But overall, very simple to make, easy to modify to your liking... works for me.

Marble Cake I

I followed the recipe to a t, with the exception of "substituting" cake flour for all-purpose (take out 2 T less per cup of flour and sift again). It was pretty good, but it definitely needs some modifications. For one, the cake was very dry - if I make it again I'll add half of a pudding mix to it to make it more moist. I also think the vanilla part of the cake could be more vanilla-y. After taking out the 3/4 cup for the chocolate, I might add a little more vanilla, too. I used 2 9" pans to bake so it made a thin layer cake and it took just under 20 min to bake. Other than that, kudos for being a very easy recipe to make and easily modified.

White Chocolate Cheesecake with White Chocolate Brandy Sauce

I made this as a parting gift for company, and they were mad I didn't make it sooner so they could have more than one piece! Just a note, I used white chocolate chips, and they worked fine... just remember if you're going to melt the white chocolate that goes in the cake using a microwave, like I did, either (a) heat up the heavy cream with it or (b) reduce the power on your microwave, because after less than 30 seconds I had BURNED chips. I reduced my power to 5 AND heated with the cream to be safe after that, and was fine. I took the advice of others and doubled the amount of white chocolate in the cake, and the flavor still wasn't overwhelming. I also halved the brandy sauce, and it made plenty... I might use slightly less brandy next time, too, because the sauce was a little alcohol-y for me.

Raspberry Lemon Muffins

This was really good. I followed the recipe exactly with the exception of two minor changes: Instead of using lemon extract and plain yogurt, I just used yoplait lemon custard yogurt, and I used fresh blueberries instead of raspberries. Lemon juice from the bottle works fine. I also recommend only baking them for 15 min - I checked at 13 minutes, and they still had a little way to go, checked again at 16 minutes and they were slightly overdone. I love that this is something you can mix without an electric mixer, and that in the end you only have two bowls to clean (I used paper linings in the muffin tray, so I only had to rinse that off after it was done).

Chocolate Cappuccino Cheesecake

I am usually not a fan of cheesecake, but I loved, loved, loved this recipe. I used TGIFriday's mudslide mixer instead of Kahlua (no alcohol, so you get almost the same flavor for less than half the price), and I doubled it. I baked the crust for about 5 minutes and let sit while I was making the cake part so it would set up better. I would also double the crust portion of the recipe next time if using a 10" pan... I used 1.5 the amount and it was still a challenge to make sure every part of the bottom was covered.

Basil Pork Chops

Delicious and super easy. I grilled on a grill pan for 14 minutes (4 minutes each side, 3 minutes each side) on med-high heat, so I only needed 1/2 the oil called for in the recipe.

Apricot Glazed Chicken

This recipe was okay, but it definitely needed something. It tasted like plain chicken that was slightly sweeter than normal. If I make this again, I will use more apricot, more soy, and less chicken stock.

Viva Madrid Spanish Chicken

Kept everything the same except the chili powder... I added some to the simmering liquid and sprinkled some on top of the chicken. I also cooked it at a medium-high heat, so it only took 25 min for prep and cook time. Served with Spanish Rice II from this site, and both are great reheated.

Blackened Chicken

Very good... I doubled the spices and rubbed both sides of the chicken, and put on a cast iron grill pan, and it was ready in about 16 minutes. I also didn't have white pepper and substituted black pepper instead, and added 1/4 tsp garlic powder. I served with mashed potatoes and green beans, and it worked well together. Do take the advice of other reviewers and turn your overhead fan on/open windows if possible if you grill indoors, because this gets smoky.

Easy Garlic Ginger Chicken

It's good in theory, but it needs tweaking. The ginger was very overpowering, even after I already cut it to 2T. I also added more garlic, but it could still use a bit more. I used about 1/3 bottle of key lime juice, and that made the marinade sufficiently lime-y without going overboard. Despite the changes, the chicken was still very moist and tender, and it was pretty easy to clean up.

Chocolate Kiss Peanut Butter Pie

This recipe was a winner at my house. I used one and a half times the recipe and it filled the pie plate nicely. I also substituted 1 c semi-sweet chocolate chips instead of kisses and doubled the amount of heavy whipping cream - this way the chocolate was much smoother. I took some of the extra heavy cream and added a little bit of confectioner sugar to it, whipped it together and added it to the pie filling so it would be lighter. I took the advice of other reviewers and made the nutter butter crust, which turned out really well. I added some reeses pieces to and chocolate chips to the top, chilled for about 5 hours and it was delicious.
