Chocolate Chip Muffins

Reviewed: Jan. 3, 2009
I loved this recipe. I made a few modifications. I added 1 cup milk, 1/2 tsp vanilla, only 1/2 cup of chocolate chips (which was more than enough). Instead of 1/3 cup oil, I added 1/4 cup oil and the remainder I filled with applesauce to make the 1/3 cup of oil required in the recipe. I thought they were delicious and I didn't even notice the small amount of applesauce I added, so next time I might try to add more and then less of the oil. I didn't even add the topping and thought they were perfect!

Eileen's Spicy Gingerbread Men

I really liked this recipe. I reduced the cloves to 1/2 tsp. They turned out soft and not too spicy.

Broiled Tilapia Parmesan

Reviewed: Nov. 12, 2008
This recipe tastes amazing. My husband loved it! I did NOT use the lemon juice or the celery salt because I didn't have any of them on hand. It was still amazing!

Baked Potato Soup I

Reviewed: Nov. 12, 2008
I love this recipe. I DID make a few modifications based on what I read from others. I cut the butter and the flour by half. I used only 3 medium sized potatoes. Otherwise, the soup was too thick for me. And I do not put the bacon in the soup. I use it as a topper for the soup, along with more cheese. Great!

Easy, Eggless Strawberry Ice Cream

Reviewed: Jul. 15, 2008
My husband and I thought this was delicious. It was very creamy! We followed the directions exactly and wouldn't change a thing (except maybe add some chocolate chips or shavings because I love chocolate and strawberries)

Lentil Soup

Reviewed: Jul. 15, 2008
We absolutely loved this recipe. I made a few changes because of what I had on hand. Instead of a 14.5 oz. can of diced tomatoes, I added 16 oz. of tomato juice. Instead of 8 cups of water, I did 16 cups of chicken broth due to people's comments that it wasn't soupy enough. This was the perfect "soup" consistency, I think. I did not add the spinach because I didn't have any. I'm sure it would be delicious with it. I added only 1 T of balsamic vinegar. It was really yummy! I will be making it again this week.
