Flourless Peanut Butter Cookies

Reviewed: Apr. 7, 2009
This is a great recipe for people avoiding flour. My son can't have gluten so these are a perfect and easy treat to make. I have made these a couple times now. The first time I went by the recipe and they are good. But the recipe doesn't make enough and they wanted to crumble a bit. So the second time I made them I used 1 1/2 cups white sugar, 1/2 brown sugar, 2 cups peanut butter, and 3 eggs. The extra egg helps hold it together as someone suggested it might in an earlier review. These were better. Perhaps next time I will use crunchy PB instead of creamy for an added texture. Great starter recipe thanks...I'm rating this one on the first time I made them.

Zucchini Pancakes

Reviewed: Feb. 7, 2009
I was looking for a recipe to get my picky three year old to eat his veggies. This was it! I have to admit I changed it a little but I am rating the texture, ease, and adaptability. I did add some cinnamon and a little bit more sugar. Also I added some chocolate chips. And this last time, a little more flour because I didn't take the extra water out of the grated zucchini. I think it helps to squeeze out some of the water from the zucchini after grating it in the food processor. I can make a batch and freeze them for easy quick and healthy breakfasts for him. They turn out so fluffy and yummy! Thanks for the great recipe.

Simple Salisbury Steak

Reviewed: Jan. 2, 2009
We didn't really like the texture of the meat. It was too mushy. I almost left the soup out of the meat mixture...and i wish i had. I would have added more bread crumbs as others suggested but i ran out so i used up what i had, which was almost a full cup. I managed to keep the patties together but the texture was weird. Not what i want in my salisbury steak. I will keep looking for a recipe i like.

Chocolate Chip Pancakes

Reviewed: Dec. 30, 2008
I am so glad I picked this recipe to make this morning as a treat for my son and husband. My three year old ate his pancake in record time. I have made other pancake recipes before but this one was super easy and fluffy. You can add in anything you want to them. I didn't make the syrup, I don't think they needed it. But it sounds good too.

Molasses Sugar Cookies

Reviewed: Dec. 23, 2008
This is a pretty good cookie recipe. They taste great. The only problem i had was the bottoms were burning after only 9 min. of baking time. So i had to take mine out early...but i blame this on the oven i was using because it doesn't seem to cook evenly. The recipe itself is pretty easy and fun to make. I used red sugar to roll them in to look festive.

Chocolate Toffee Crunchies

Reviewed: Dec. 23, 2008
These were a big hit with the family this christmas. I will definately make these again. They are similar to a recipe using saltines just layed out on the pan with the toffee mixture poured over that. But these are thicker. I used Hazelnuts instead of pecans and that worked out great. I also lined my pan with cooking spray and parchment paper. After letting it chill in the fridge i simply pulled out the whole thing by using the parchment paper. I then cut it into squares on my cutting board. I made a second batch but used graham crackers instead of vanilla wafers and they turned out pretty good but the vanilla wafers were better in my opinion. Thanks for the recipe...it's going in my box.

Roasted Potato Pizza Slices

Reviewed: Nov. 13, 2008
This was a great idea. I have to admit, I didn't follow the recipe exactly though..i rarely do. I didn't have any bell peppers, mushrooms, or onions but i did have everything else. I added some seasonings, too. My husband loved them so much i ended up having to make more of them later that night! Even my three year old son who is a VERY picky eatter loved ate several of them. This recipe was fantastic and has so many possiblities...Thanks! Maybe next time I could do a mexican twist..using hot sauce, cheddar, with a jalapenos.

Meatloaf Cordon Bleu

Reviewed: Nov. 4, 2008
I made this recipe because i was tired of the usual meatloaf that i make and my husband loves my chicken cordon bleu. So, it seemed a nice match. And it was. I changed alittle. I reduced the amount of onion because my husband isn't a fan. I added a chopped up bell pepper so there would be more veggies. I used mozzarella cheese because that's what i had on hand. Although i do wish i had used Swiss or the Provolone. The mozzarella has nice texture but was a bit bland. I also think next time i will add some Italian bread crumbs or seasonings and maybe some tomato paste or ketcup. Although it was nice and moist. My husband had three helpings! I will definately make this again sometime.
