Hi Everyone,My name is Valerie. I got the name Lerie as that is the nickname my husband gave me when we met.I am happily married and have a dog that is our very spoiled baby.Mickey is a cross between a lab/husky/collie.Our second baby is a wiener dog that belongs to friend of my DH but has decided she wants to live here and comes here every chance she gets!I am a pastor and I love too cook.Due to severe health problem (Liver NOT from drinking) and a Diabetic,I have special diet needs. Sooooo,I take regular recipes and turn them into low carb, low fat,low sodium recipes to suit my needs while still making them full of flavor.I would be very happy to help others with this if they wish.I love animals especially wildlife. Before getting sick I used to raise orphaned and injured wildlife then prepare them for release.I miss living in the country now that I live here.Country girl in the city. Not bad tho.Love spending time outdoors and helping people.

P.S. Have you signed your organ donor card yet?  If not why not sign it today?

Hi Lerie! Great blog. I also have a lab/husky mix (although, no collie) and we also got our second dog (lab/sheltie mix) sort of the same way as your little weiner dog. It's nice to meet you!

Hi Valerie, I just tried the Orange White Chocolate Beltane Cookies. I changed them a bit by adding more flavoring and more zest. Personally I was disappointed in the flavour, although the texture was fine. I would not have given this recipe more than 3+ stars yet it earned 4 1/2 stars in all recipes ratings. Next time I would OMIT the vanilla extract as it overpowers the orange flavour. What do you think? I understand that you had your own adapted recipe for sharing and now it is not. Is there anyway to FIND OUT what YOUR MODIFICATIONS were? I, too, moved to Toronto from a smaller community-- New Brunswick--and adapted to big citylife. It is harder here to make new friends. Since I was in elementary school I have loved cooking and baking, although since a cast was misapplied I have chronic pain so my baking is in spurts. From your blog, I am guessing that your life has also undergone some major changes due to medical conditions. I know how difficult that can be! Are you waiting for a transplant or just supporting the organ donor cause? Cooking/baking can be very therapeutic even if time-consuming. I am trying to compile 100 recipes, that I have personally tested, for a cookbook I want to MAKE for my sister for Christmas this year. My goal may not be achieved by the end of November, as I have to try each recipe and then make again with modifications after I have tasted it if I think it is worth a refinement (some are not!). Animals are also wonderful if you are not feeling your optimum. I grew up with dogs, but now have 2 rescued cats of my own. Their bond is incredible and their antics keep me laughing. One of them sleeps with me and her purring is soporific even if she now (since getting struvite crystals and becoming really sick last summer)lies against the top of my head. Keep cooking and smiling at the results! Heather

Hi Valerie! I just saved your recipe for Nippy Pork Salad. I can't wait to make it. Can you tell me why some one changed it to using a food processer if you didn't include it in your instructions? How can that happen when a recipe is submitted? I haven't been published yet....still waiting. I hope they don't change any of my instructions. I'm sorry that happened. I'll make it exactly the way you wrote it. Take care, Sharon
