Hamburger Steak with Onions and Gravy

My hubby and I just made this, only changing two things... 1) added mushrooms after "steaks" were done browning, and sauteed for a few minutes more til tender, and 2) added a splash of orange juice instead of sherry (none in house). Towards the end, I needed to add more flour... I use a gravy flour for things like this, so maybe it wasn't thickening as much as normal flour, but I must have added about 3-4 tablespoon total, which got it to the right consistency but made it a little floury-tasting. And, this makes 4 regular-sized "steaks", not 8; which was just enough for hubby and I.. he had three, I had one. We had to cook them ALOT longer than 4 minutes on each side.. we flipped and cooked them the same amount of time about 4 times. The gravy is missing something. I am thinking about trying the "Bordelaise Sauce with Mushrooms" that is on this site next time, and see if it fits what I am wanting:)

Rempel Family Meatloaf

Okay, I have been meaning to write a reviews to this for AGES..... I have been making this recipe for as long as I have been on AR, and it is so far the BEST recipe... I don't even make my mother's recipe anymore. LOL! Two things I wanted to say: 1) The ONLY change I make, is BBQ sauce instead of steak sauce (we never have steak sauce in the house, but tons of BBQ sauce). Sometimes I use Kansas City-style BBQ sauce, sometimes I use Korean style.... depends on the mood of the day. Try different BBQ sauces with your mood. 2) (And the main reason I wrote this tonight).... this meatloaf is STILL good, moist and juicy, even when overcooked.... *laughs*. My husband and I are gamers, and tend to forget things sometimes. I forgot to put on the timer, and we forgot about the meatloaf. It was in 20 minutes too long, and was STILL delicious:) THIS is the ONLY meatloaf we make now:)

The Best Meatballs You'll Ever Have

These were absolutely phenomenal. We had some ground beef that we bought on special and I wanted to make freezer meals. Your recipe came out just perfect... I made about 12 small ones for taste-testing and bagged the rest for later use. They were just perfect, even without any sauce:) I DID sneak in a little cheese, but only because we loveeee cheese in our meatballs here:)

New Year's Day Black-Eyed Peas

This came out absolutely perfect:) I DID cheat and use canned black eyed peas, only because I wanted to have them for New Years Eve dinner. I am from the South, and this was a staple NYE required food. Since moving to Quebec, I missed cooking them last year, but this will be my yearly recipe from now on:) Thank youuuu!!!!

Birthday Bones

I have 3 dogs, one of whom is allergic to beef, and one of whom is allergic to chicken and has skin senstivity, so corn is BAD.... I have searched high and low for the perfect treat, and this one is approved by my hubby and all three of the girls:) I DID make some changes, for their health and to make them easier for my purpose (training cookies)... 1) made 1/2 batch... needed little cookies, so 1/2 made 500 little cookies. 2)used all-purpose flour (all I had), upped to 1 cup peanut butter, changed milk to water, added a squirt of honey, 1/4 cup oatmeal, and 1/2 cup parsley, and then... 3) kneaded it a little with my hands, grabbed a nice handful, rolled it into a big ball, then into a "snake" (long, thin cylindrical shape), then pinched off little bits, rolled them into little tiny balls (about 1/2 to 1 inch), then criss-cross forked them like little peanut butter cookies. On a pizza pan, it was 100 little bitty peanut butter cookies per batch...hee. Long story short, the girls figured out Mommy was making cookies for them, and they didn't leave my side the WHOLE time I was making these, and they LOOVVVVEEE them:) Thank you SOOO much for this recipe! You have made all of us SO happy:)
