Brenda's Apple and Pomegranate Crisp

This was my first experience with Pomegranate seeds and I did find them a bit tough on the teeth. It was pretty tasty - especially warm with vanilla ice cream on top. If I made it again, I might cut back on some of the nutmeg and maybe some of the sugar. I would also use Granny Smith apples as the ones I had on hand were Fuji and quite sweet. I would like it a little more tart.

Simple Ranchy Breaded Fish Fillets

I've been making this for the last year and a half - probably at least ten times. At first I followed the directions exactly, but they were a bit greasy, although very tasty. I've experimented with different reviewers tips and tonight it was delicious perfection! Mix about 3/4 of the ranch packet with the bread crumbs. Dip the fish in a bit of whisked egg, then into the bread crumbs. I did exactly 5 minutes on each side and it was perfect - the best texture it ever had.

Crab and Swiss Quiche

This recipe comes together so quickly! I can get it into the oven in five minutes! My husband and I enjoyed it for years exactly as written. Lately I've gotten a little more adventerous and added green onion, or chives, or dill, or frozen spinach. Amazingly my picky husband has eaten and enjoyed all versions. Great as leftovers as well. I highly reccomend this one.

Corrigan's Minestrone

Good stuff. I left out the pasta as I'm sensitive to gluten. I took other reviewers suggestions and sauteed the onions first, then added the garlic. I used 16 oz. of vegetable broth and then put in enough water til it looked right. I used dried herbs. I had to cook it longer to get the veggies soft. Leftovers were great. It made a LOT of soup - I gave decent portions away to two friends.

Butter Icing for Sugar Cookies

Delicious! I used the full amount of high quality vanilla and everyone seemed to like it. I didn't like the brown color however. It made it tough to get the colors I wanted with my food coloring. I may use clear vanilla next time.

The Best Rolled Sugar Cookies

Couldn't be better. Some people even thought that they were better than our local bakery's famous sugar cookies. I've made them three times and they've turned out great. I did mix the dry ingredients separately and then add them to the wet mixture. I've rolled and cut them with great results. This last time I rolled them into balls and flattened with a drinking glass dipped in flour. I've paired them with "Sugar Cookie Icing" and "Butter Icing for Sugar Cookies" Both wonderful, can't decide which I like better.

Grilled Cilantro Salmon

My husband and I have been wanting to eat more salmon, because it is a "super" food nutritionally. Unfortunately we didn't actually desire to eat it more than once a month. After eating this salmon we feel like we could eat it once a week. We did it just as directed and it was SUPER good!
