Stuffed Peppers My Way

Reviewed: Jan. 19, 2015
I liked the roasted peppers better than my usual way of boiling them. Will make this again!

Grandma's Favorite Chicken

Reviewed: Jan. 3, 2015
Very easy - loved that it's a "one pot" meal! Having read other reviews about it being bland, I used chicken broth instead of water and sprinkled the spices (basil, oregano, garlic salt, pepper) with a heavy hand. Good comfort food. Took every bit of 90 minutes; next time I may cut the potatoes smaller.

Broccoli Barley Saute

Reviewed: Nov. 18, 2014
Sauce was nice and light. Could have used a little spice (red pepper flakes?) but overall we enjoyed it as written.

Sweet and Sassy Pork Tenderloin

Reviewed: Aug. 28, 2013
This is a great way to cook pork tenderloin on the grill! I cut back the red pepper flakes to 1/2 teaspoon and the sauce was still very spicy but most of us liked it.

Baked Kale Chips

Reviewed: Aug. 27, 2013
These are tasty, and a creative way to use up kale from the CSA box. I've had better luck baking at 300 degrees for about 15 minutes, and also using a perforated pizza pan or putting the kale on a cooling rack on a sheet pan.

Hamburger Soup I

Reviewed: Oct. 31, 2012
I substituted beef broth for the boullion and water, and I added a cubed potato. Don't skimp on the seasoning, either. Tasty!

Oven Baked Zucchini Fries

Reviewed: Jul. 8, 2012
These were pretty good - don't overcook or they will be a bit mushy on the inside. Good flavor.

Roasted Swiss Chard with Feta

Reviewed: Jun. 23, 2012
Great way to use Swiss Chard from the CSA box! I took the advice of other reviewers and did not add any salt - the feta cheese was salty enough.

Southern Apple Tuna Salad

Reviewed: Mar. 12, 2012
This recipe saved me on a day when I was out of celery, and we liked it with the apple! I did add some slivered almonds for a little extra crunch.

Slow Cooker Thai Pork with Peppers

Reviewed: Sep. 13, 2011
The family proclaimed this "excellent". I made it as written. I do use low sodium soy sauce and chicken broth.

Easy Arugula Salad

Reviewed: Sep. 10, 2011
Good salad! The dressing tones down the peppery taste of the arugula a bit. I did toast the pine nuts.

Cheesy Nacho Bake

Reviewed: Aug. 25, 2011
A big hit with the family! I added a small can of diced green chilies for some extra flavor, but otherwise stuck to the recipe. The bottom layer of chips does get soggy but you can spread it in one layer in a 10x15 pan if you want it crispy.

Gravy Baked Pork Chops

Reviewed: Mar. 9, 2011
Too much liquid and it was too thin - next time I would skip the milk and water or use less than a full can of soup. Based on reviews that it's too bland, I also added thyme and minced onion to the soup mixture and more seasoning to the pork chops.

Glazed Pork Tenderloin

Used apricot preserves instead of pineapple due to personal preference.

Onion Barley Casserole

Reviewed: Jan. 11, 2011
Great way to cook barley! I substituted leek for the green onion and used fresh mushrooms because that's what I had on hand, sauteeing them along with the barley before adding the broth.

Wilted Spinach

Reviewed: Jan. 11, 2011
This was good. Based on earlier reviews, I doubled the amount of spinach to serve 4 people. Only needed a couple tablespoons of the dressing (and probably could have just used a balsamic vinaigrette). Definitely top with Feta cheese!
