Crustless Spinach Quiche

This was wonderful! Super easy to throw together and really delicious. Didn't even miss the crust! I added baby bella mushrooms to my spinach mixture and used butter instead of oil. Will definitely be making this again!

Teriyaki Pork Tenderloin

Very tasty and very easy to make. Upped the brown sugar to 2 tablespoons and marinated the tenderloins overnight. Cooked to an internal temp of 140 degrees F. Pork was super tender and juicy.

Guinness® Corned Beef

This was quite good. I used almost 3 cans of guinness to cover the brisket and I think next time I might try a combo of half guinness & half beef broth.

Southwestern Lasagna

This was pretty darn tasty! I omitted the olives as neither the boyfriend or I care for them, added a layer of refried beans & used a can of RoTel diced tomatoes with jalapenos. This was even better reheated the next day. Will definitely ba making this one again!

Pan-Fried Asparagus

This is my new favorite way to prepare asparagus. Even the boyfriend, who isn't a big asparagus lover, went back for seconds. Will definitley double the recipe next time as this made closer to 2 servings than 4.

Delicious Ham and Potato Soup

Yummmmmmm!!! This soup was delicious! The only changes I made were to saute the onions & celery in a tablespoon of butter before adding the ham, potatoes, & liquid and adding 8oz of velveeta to the roux (the soup would be great without the cheese- I was just looking for a way to get rid of it). The boyfriend had seconds and thirds and has declared this his 2nd favorite soup (after Zuppa Toscana which you can also find here on AllRecipes). I will definitely be making this soup again and again!

Chocolate Trifle

Very easy to put together. Instead of using the condensed milk, I made the pudding according to package directions to try & cut the sweetness. I also added a layer of smashed up Heath Bars.

Simple BBQ Ribs

Super simple to make & very, very tasty! Took the advice of some other reviewers & boiled ribs in a combo of beef stock & water and used 3 cloves of garlic instead of the garlic powder. Also added a couple of tablespoons of minced onion to the mix. Baked ribs for 1 hour covered and then an additional half hour uncovered. Boy, oh boy, were these good!!

Original Homemade Italian Beef

Really easy & very tasty. Subbed beef broth for the water and added 2 cloves of minced garlic. Served on toasted rolls with melted provolone. The boyfriend gobbled it up!!!

Creamy Chicken and Wild Rice Soup

Comfort food at it's finest! Took others suggestions & sautéed onion, celery, mushrooms, & garlic in a little butter until soft and then added the broth & water to that mixture. Used a 6 oz package of rice as that was all I could find. The boyfriend has declared that this is officially his 2nd favorite soup (behind the Zuppa Toscana that you can find here on AllRecipes). Garlic Chicken with Orzo Noodles

Super easy & super tasty. Great for when you are short on time. I followed others advice & cooked the orzo in chicken broth. I also seasoned the chicken with poultry seasoning, salt & pepper before I added it to the pan. Doubled the garlic & the spinach and added mushrooms as well. the boyfriend cleaned his plate & went back for seconds.

Best Chocolate Chip Cookies

These really are the best chocolate chip cookies I have ever made! Followed the recipe exactly (except for omitting the walnuts) & they came out crispy on the outside and soft & chewy on the inside. This will be my "go to" chocolate chip cookie recipe going forward! Thanks Dora!!!

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Too sweet for my taste but everyone else loved them! I let the cookie dough freeze overnight & baked the cupcakes for 17 minutes. The cookie dough stayed doughy & the cupcake was super moist. Used Trader Joe's boxed chocolate frosting which is what I think put them over the edge for me. Will try with a not so sweet frosting next time.

Clams and Chourico

Super easy & super delicious. The only change I will make next time is to use a 14oz can of tomatoes as opposed to the 28oz can. Just my personal preference :) Served with toasted sourdough bread (for soaking up the broth) & a green salad. The boyfriend & I both loved it!!!

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Made this last night for the boyfriend's birthday. It was amazing! Roasting the filet made it unbelievably tender. The boyfriend said that he thought it was just as good if not better than what he has gotten at our local steakhouse. Next time I will double the sauce. It was delicious & we wanted more for the mashed potatoes that I served it with.

Awesome Baked Sea Scallops

Delicious & very easy. Made it exactly as written & the boyfriend & I both loved it. FYI- If you aren't a big garlic fan, you will probably want to cut down on the number of cloves you use as this dish is quite garlic-y.

Fast and Easy Spinach with Shallots

This is one of my favorite ways to prepare spinach! My personal preference, is to add a couple of cloves of minced garlic to the pan along with the shallots. I also hit the pan with a splash of balsamic vinegar right before serving. The boyfriend likes this best when I top it with some grated parmesan, but it is equally delicious without!

Chicken In Sour Cream
