Grandma Johnson's Scones

We loved these scones. Did a homeschool unit study on England during the Olympics and used these to accompany tea. Soooo yummy even without anything on them. Made ours with blueberries and followed recipe exactly. Kids kept asking for more.

Yellow Squash Casserole

Fresh Salsa

I made this via the original recipe and then made a few of my own changes. It was much better using just 1 jalapeno, no jicama, and using sweet onion instead of red onion. (It was still "warm" enough for my husband, but not too "hot" for me.) I have substituted regular tomatoes (de-seeded) for the romas and it turned out great as well. I usually just seed the jalapeno then throw everything in the food processor together instead of cutting everything up to save time.

Fluffy Seven-Minute Frosting

This recipe is awesome. So yummy. My mother and I used it to frost my daughter's princess birthday cake (2 bowl cakes stacked with Barb*e stuck in it). We used a candy thermometer and made sure the eggs were near room temp when we started. Not the most dense frosting in the world, but it held up fine for a 3-year old :-) It was stiff enough to make nice dress wrinkles as we frosted the cake. This was SO much better than store-bought frosting (bakery cakes or pre-made tubs)!

Chicken Tortilla Soup V

Wonderful, easy recipe. I have used pre-cooked chicken/turkey, doubled the recipe, and added a couple of cans of black beans. This recipe is also great for the slow cooker. Just throw in all the ingredients (meat pre-cooked) and let it go. Very tasty!

Moroccan Chicken and Whole Grain Couscous

My husband and I were both wondering how this recipe got rated so high. I've been cooking for years and followed the recipe exactly as printed. It was bland and somewhat sweet, but not very tasty to be blunt. I actually ended up digging all the chicken out of it (because I couldn't stand to throw it out) and threw taco seasoning on it to make chicken tacos out of it. On a good note, my husband realized he likes chickpeas.

Beth's Spicy Oatmeal Raisin Cookies

Very chewy and yummy! Great recipe. Made changes on second batch by using 3/4 c whole wheat flour and 3/4 cup all purpose, using 1/2 c brown sugar Splenda, and using pumpkin pie spice instead of cloves. Great both ways :-)

Cheddar Bay Biscuits

I prepared these according to the recipe and they were average. They were rather bland. (Side note: I did use low-fat Bisquick.) It made 13 good-sized biscuits. In the second half of the batch, I added a little salt and garlic powder to the dough, and they tasted much better. With the modification, I'd give them 4.5 stars. Next time, I plan on trying milk instead of water and maybe adding a little butter to the dough.

Magic Cookie Bars II

A wonderful recipe, we used peanut butter chips instead of butterscotch b/c that's what I had on hand. I would recommend not messing with the crust as I followed suggestions to double the crust and it ended up being a bunch of crumbs in the bottom of the pan. I put half the milk on the crust and half on the coconut. Will be following recipe strictly next time in hopes that the bars will stick together better.

Pineapple Sirloin Skewers

Great flavor. My husband and I thought it was wonderful. There were a few changes I made to the recipe. First, I used about 3/4 the pepper the recipe called for because of other reviewers' comments. Second, I used about half the ginger because I ran out. Third, I added about a tablespoon of vinegar to the marinade. I'm looking forward to the leftovers. We highly recommend!
