Awesome Slow Cooker Pot Roast

This roast turned out much better than how I used to cook roasts. The flavor is awesome and the roast super-tender. I agree with other reviewers that the best cut to use for this roast is a tri-tip roast. I have made this recipe with other cuts but, so far, have enjoyed the tri-tip the best. For best flavor, I sear the roast on all sides first before adding to the slow cooker, adding some garlic, rosemary and coating w/flour. The flour thickens the gravy nicely when done for serving over mashed potatoes or rice. The 2nd time I made this I also added about a tablespoon of Worcestershire sauce to the gravy which turned out great. Overall, this one is a keeper and I will make (with the modifications noted) this one over and over.

Squash Soup

The family wasn't sure about this recipe but in the end they really liked it. This soup tasted very similar to the broccoli cheese soup that I make and that the family all loves. I made the recipe exactly as written and will definitely be making again. Thanks for a great recipe!

Best Black Beans

This simple side dish is surprisingly good. I served it together with Carol's Arroz con Pollo (also on this site) and the entire family loved it -- even my wife, who "hates" beans of all types, said that these were good. I drained the beans and then rinsed in a colander before cooking. I also sauteed the onions and garlic for a few minutes with approx 2Tbs of butter before adding the beans. The end result, while having a few more calories from the butter, turned out very tasty and well-paired with the rest of the meal. Have made twice now and has been very well-received both times.

Chicken Cordon Bleu II

This dish turned out wonderful and was well worth the work. As with other reviewers, I strongly recommend doubling the sauce (I did). I also used chicken boullion in place of the wine. The dish turned out wonderful paired with the Mushroom Rice Pilaf (also on this site). Thank you for a tasty and relatively easy chicken dish!

Mushroom Rice Pilaf

I was looking for a good side dish and came across this recipe. I made it knowing that I would love it -- wasn't so sure about the rest of the family, though. It turns out that they all loved it and have since requested that I make it again. The blend of flavors makes this dish a perfect side dish to any number of main courses -- I served it with the Chicken Cordon Bleu II also found on this site for a wonderful dinner. This dish is now a part of our regular rotation. Thanks!

Fluffy Pancakes

These pancakes were the best! Light and fluffy and the best pancakes that I've had in many years, including those at some specialty restaurants. I made them exactly according to the recipe (doubling the recipe) and the family gobbled them up as fast as they came off the griddle. These are now my favorite pancakes and I'll definitely be making them again!

Caramel Pecan Pie

This pie was EXCELLENT! I made it as per the recipe with the exception of substituting 1/2c brown sugar for the white sugar. The pie turned out sublime - not overwhelmingly sweet like so many Pecan pie recipes (it was plenty sweet - don't get me wrong - but not completely overwhelming). I made this pie for Thanksgiving this year and now it is on the "must-have" list for next year. Thanks for a GREAT recipe!

Quick Chicken Divan

I really liked this but the kids didn't care for all the broccoli (I added extra). Overall a very yummy dish that I served over rice. I did wish that it was a little bit "saucier" to better go over the rice, so I'll probably tinker with it some next time. Overall great recipe.

Home-Style Scalloped Potatoes

One of the best scalloped potato recipes that I've had. I grew up with scalloped potatoes and found these to be a nice treat. I made the recipe as-written, with the one addition of sprinkling some parmesan cheese on top after it came out of the oven as suggested by another reviewer. All-in-all very nice.

Absolutely Ultimate Potato Soup

This soup received mixed reviews in the family. Several of us, including myself, loved or really liked it; two of the kids thought that the tarragon was too strong, overpowering the other flavors in the soup. Overall a good soup, though the prep time, as others have noted, is WAY under-stated. I'll probably make this again but cut the tarragon by about 1/3 to see how it turns out.

Thanksgiving Leftover Casserole

This one is definitely a keeper. Made this after Thanksgiving and it was such a hit with everyone begging for more I made it again the next night and 2 nights after that. The kids can't get enough of it and my wife loves them too. I didn't change anything in the recipe and it came out awesome!

Ground Beef Stroganoff

This recipe turned out all right. Compared to my sister-in-law's recipe, though, this didn't nearly measure up. It was quick and easy and did taste good; however, I guess that I'm just spoiled. :-) Thanks for sharing, though!

Potato, Broccoli and Cheese Soup

I made this recipe the other night and it turned out surprisingly delicious. It was easy to make and, other than the cheese, much lower fat than my regular broccoli cheese soup. I thought that the amount of onion would be excessive but it actually turned out quite good. I took one star off because of the presentation, although that is likely a function of my picky eaters than anything else. The recipe calls for adding the broccoli prior to pureeing half the soup contents; however, doing so ends up turning the soup a greenish color. I didn't mind that at all but the picky kids at home did. When I make it again (and I will) I'll do the pureeing prior to adding the broccoli. Overall this was a good, inexpensive and filling meal for a cold fall evening. The kids think that it would be good with some crumbled bacon -- this recipe lends itself to experimentation and I look forward to doing so.

Sloppy Joes II

This turned out pretty good -- better than the last recipie that I tried and closer to that "perfect" recipie that we all strive for. I added about 1/4 c barbecue sauce to a 2x recipie and we all thought that it added a subtle enhancement to the flavor of the sloppy joes. The wife and kids loved this recipie although I'm searching for something with a little more kick to it. This recipie is good enough to serve as a base for future recipie attempts.

Three Cheese Baked Pasta

I made this the other night and stuck exactly to the recipie. The entire family loved it and I've got a few hard-to-please eaters. I'm definitely going to make this again, although I do plan on trying with just mozzarella to cut down on the cost a little bit (provalone is on the pricy side). I may try some other variations, but as-written the recipie is definitely a keeper!

Gourmet Chicken Pizza

I quite liked this recipie and it was a good change from the traditional tomato-based pie. The rest of the family, however, wasn't so hip on eating it (some wouldn't even try it). I will make it again if making just for myself, but the family would rather take a pass on this one.

Tuna Noodle Casserole II

The kids thought that this recipie was great, and they're not generally fans of casseroles, so that is saying somthing. I left the chips off of the top and instead topped with a little bit of mozzarella cheese. I don't know what it is about crumb-style toppings on casserole dishes, but my kids refuse to eat them *sigh*. We liked this recipie quite a bit and will be making it a regular part of our recipie rotation. Yum!
