Taco Seasoning I

This seasoning is the best and I use it now all the time vs. store-bought stuff. I highly recommend that you give it a try. You can experiment with different kinds and amounts of pepper flakes or other ingredients to adjust the hotness to what your family likes. I make a big batch of this and keep it in a bottle in my spice rack for regular use. Thanks for a great recipe!

Easy Honey Mustard Mozzarella Chicken

I made this recipe exactly as written and found the same issues as other reviewers -- the honey/mustard mix was way too overpowering for the chicken *and* the bacon. In addition, the cheese tended to just slide off the chicken breasts when serving them. This dish has great potential and I plan on making it again; however, I plan on the following changes: 1) reduce the amount of sauce while also using dijon vs. prepared mustard and changing the ratio to reduce the honey "sweet" factor and 2) wrapping the bacon all the way around the chicken to try to avoid it and the cheese slipping off. I'll update my review after trying it with my changes and let everyone know how it turns out.

Bubba's Jambalaya

Wow! This recipe turned out spot-on for my family and received rave reviews all around (well, unless you count my oldest daughter who is against all things seafood on principle -- but I did see her get seconds so I think that she was complaining just to complain). The flavors came together spectacularly and the seasoning was just right for the family (I'm the only one that likes things with more kick). I ended up making the rice separately as I had some leftover from the night before that I wanted to use up in this dish. I also tossed in some shredded carrots along with the other veggies since I wanted to use them up. This made a great dinner meal and I'm looking forward even more to leftovers for lunch today now that the flavors have had more chance to blend. Thanks for a great recipe!

Mama's Asian Chicken and Rice

I had almost the same result as cook ArianaMelodie. My sauce turned out almost black (really, really dark brown) and was incredibly strong. As in way, way, way too strong. It didn't just overpower the chicken -- it drowned it out. I followed the recipe exactly and it really didn't turn out good at all. My wife and two daughters also thought that it was way too strong. I don't think that I will make this one again.

Master Pizza Dough

I've tried several pizza doughs lately in search of a keeper. This dough hits the mark with simplicity of preparation together with a good flavor. While there are fancier doughs out there, this one can't be beat for how easy it is to prepare and the good flavor that it has.

Marinated Grilled Shrimp

Based on the reviews I really expected better of this marinade. My wife really enjoyed them but I thought that they simply didn't have the flavor that I was expecting. My taste buds, instead of going "Wow!" were left going "Ho-hum". Don't get me wrong, this marinade isn't bad but as-written it just doesn't impart the flavor that I was looking for. Next time I will experiment with the herbs and spices to see if I can get the flavor to pop more.

Baked Parmesan-Crusted Chicken

Have made this recipe several times and it has always turned out great. A couple of times when I've been short of time I've used Italian bread crumbs rather than plain + herbs and it's turned out great. This is an incredibly simply recipe that is delicious and satisfying to the entire family.

Fried Rice (Sinangag)

Very good and a definite improvement on what we used to make. My wife made the comment "Hey! This tastes like the stuff we get from take out!" and I had to agree. The garlic makes the difference. This recipe is a keeper! I've made it several times now to go with oriental dishes and it is a favorite of the entire family. Thank you!

Seven Layer Tex Mex Dip

Yum! Having tried other similar dips I was expecting yummy goodness but not to the level that this recipe delivers. Seasoning the sour cream takes it up a notch and has made this my go-to recipe for layered dips. The entire family loved it!

Roast Potatoes

Made these exactly as written and they turned out excellent. Since my wife likes them crispy I broiled them for a few minutes when they were done to crisp them up and they disappeared faster than I would have believed. This one is definitely a keeper!

Slow Cooker Chicken Taco Soup

This recipe is, to put it simply, awesome. I've always made it with the homemade taco seasoning referenced by other reviewers so I can't say how it would taste with the packaged stuff from the grocery store. With the homemade stuff, it comes out delicious and has met with rave reviews every time that I've made it. I've made this 3 times now and the last time doubled the seasoning to kick things up a notch which was appreciated by all but two of my children who don't like spicy. I definitely recommend this recipe! Oh, and I put in 1 fewer chicken breasts than called for - as-written we felt that the quantity of chicken once shredded was a little much. If you like a meaty soup then you'll like it as-written; however, we like it better with a little less meat. Excellent recipe!!

Garlic Mashed Potatoes Secret Recipe

I made this recipe as-written with the only changes being to reduce the quantity to 8 servings and to use roasted garlic vs. chopped. The roasted garlic really ups the flavor and I highly recommend it. These potatoes were delicious and everyone enjoyed them -- that was until my wife found out how much butter is in them! Flavor-wise, 5-stars but calorie-wise, a little less. I'll definitely be making these again but will experiment adding milk and reducing the amount of butter to see if I can get a lower-calorie version for the family. Overall a great recipe and one that is a keeper.

Bacon Wrapped Hamburgers

Overall, my family loved these burgers apart from the quantity of onion (personally, I love onion, so these were great, but the rest of the family wanted just a little less). I had to broil these (grill is under a foot of snow) but they really did turn out great; very juicy and tasty. Now that I've made this per the recipe, next time I think that I'll try BBQ sauce in place of the ketchup and replace some of the onion with garlic since I think that that will suit the family's tastes overall. Still, an excellent recipe - thanks for sharing!

Grilled Yellow Squash

This turned out to be excellent, at least to the opinion of those in the family that like squash. I followed the suggestion of another reviewer and brushed the finished squash with a little melted butter. The result was excellent!

Awesome Slow Cooker Pot Roast

This roast turned out much better than how I used to cook roasts. The flavor is awesome and the roast super-tender. I agree with other reviewers that the best cut to use for this roast is a tri-tip roast. I have made this recipe with other cuts but, so far, have enjoyed the tri-tip the best. For best flavor, I sear the roast on all sides first before adding to the slow cooker, adding some garlic, rosemary and coating w/flour. The flour thickens the gravy nicely when done for serving over mashed potatoes or rice. The 2nd time I made this I also added about a tablespoon of Worcestershire sauce to the gravy which turned out great. Overall, this one is a keeper and I will make (with the modifications noted) this one over and over.

Squash Soup

The family wasn't sure about this recipe but in the end they really liked it. This soup tasted very similar to the broccoli cheese soup that I make and that the family all loves. I made the recipe exactly as written and will definitely be making again. Thanks for a great recipe!

Best Black Beans

This simple side dish is surprisingly good. I served it together with Carol's Arroz con Pollo (also on this site) and the entire family loved it -- even my wife, who "hates" beans of all types, said that these were good. I drained the beans and then rinsed in a colander before cooking. I also sauteed the onions and garlic for a few minutes with approx 2Tbs of butter before adding the beans. The end result, while having a few more calories from the butter, turned out very tasty and well-paired with the rest of the meal. Have made twice now and has been very well-received both times.

Chicken Cordon Bleu II

This dish turned out wonderful and was well worth the work. As with other reviewers, I strongly recommend doubling the sauce (I did). I also used chicken boullion in place of the wine. The dish turned out wonderful paired with the Mushroom Rice Pilaf (also on this site). Thank you for a tasty and relatively easy chicken dish!

Mushroom Rice Pilaf

I was looking for a good side dish and came across this recipe. I made it knowing that I would love it -- wasn't so sure about the rest of the family, though. It turns out that they all loved it and have since requested that I make it again. The blend of flavors makes this dish a perfect side dish to any number of main courses -- I served it with the Chicken Cordon Bleu II also found on this site for a wonderful dinner. This dish is now a part of our regular rotation. Thanks!

Fluffy Pancakes

These pancakes were the best! Light and fluffy and the best pancakes that I've had in many years, including those at some specialty restaurants. I made them exactly according to the recipe (doubling the recipe) and the family gobbled them up as fast as they came off the griddle. These are now my favorite pancakes and I'll definitely be making them again!
