Pickled Eggs II

Next time I'll cut the water and add more vinegar and leave the bay leaf out (there's already bay leaf in the pickling spices I used). Good, but not great.

Easy Meatloaf

Good basic recipe, easy to tweak to your own tastes. I skipped the brown sugar/ketchup topping and used Chef John's Creamy Mushroom Meatloaf recipe with great results. I'll make this one again!

Excellent! Turned my average venison meatloaf into something special. Didn't adjust the recipe at all and it turned out perfect: rich, creamy, mushroomy goodness.

Detroit Hot Honey Wings

Best wings, period. The honey lends a sweetness to balance the spice. You can control the "heat" of the wings by adding more or less of the cayenne pepper during grilling. Note that the recipe calls for basting the wings during grilling with honey. Keep your flame low or the sugar in the honey will burn quickly. Followed the recipe exactly, using 1/2 cup Franks Hot Sauce, 1/2 cup honey, and 1/2 cup butter and had more than enough sauce to coat a 4 lb batch of wings with some left over. My only change to the recipe was to return the wings to the grill after coating with the sauce and I basted the wings with the leftover sauce for a few minutes. Absolutely the best wings I've had, even better than BWWs!

Best Beef Stroganoff

Like many other people, I used this recipe as a guide and changed it to fit what I had on hand. I used canned venison, dehydrated morel mushrooms, and marsala wine. The liquid used to rehydrate the morels in was reduced and added to the broth from the canned venison. I skipped the minced garlic so it wouldn't overpower the delicate morel flavor. I had to add about 4-5 tbsp of flour mixed with venison broth to thicken the sauce. The resulting dish was wonderful! Can't wait to try it with fresh morels this spring. I particulary liked the lemon juice addition: it seemed to lighten the flavors without standing out. Thanks for sharing.

Deep-Fried Turkey Marinade

Not bad. Tastes better than it looks. Not too spicy. Goes on like coffee grounds, but flows out over the turkey with time.

Sausage Casserole

I substituted 4 ounces swiss cheese for part of the cheddar and , added added chopped green & red sweet peppers, 1/2 can of chopped mild green chilies for a little kick. Also added fresh mushrooms, sauteed w/the sausage. Very Good! Next time I'll add a couple more eggs and cut back on the potatoes.

Chicken Pot Pie VIII

Also excellent for ruffed grouse! A 10x10 baking dish worked well and held all the ingredients perfectly. After reading some reviews, I cooked the veggies in broth before adding to the baking dish. Will definitely make this one again.
