Mojito

This recipe is good in that it is simple. As a bartender I am hyper-critical and I see lots of people over do it on the ingredients. Personally, I use 6 mint leaves to muddle. I think it's the minty flavor that makes this drink so unique and refreshing. If you're getting a bitter flavor, you're mashing the rind of the lime too much. You want to release the juices, but not the oil from the rind. That's where the bitterness comes from. This recipe has the perfect amount of lime if you're juicing it right:)

Louisiana Sweet Potato Pancakes

Very good! I was looking for a potato pancake recipe to use with some leftover sweet potato mashers I had and I thought this would be perfect. I didn't add the melted butter because my leftovers already had butter in them, and a bit of sour cream. I used raw coconut oil to cook them and they were delicious. Thanks!

Jalapeno Snacks

Awesome recipe. Made it exactly as the recipe says but I did decide to cook them on a broiler rack for drainage since some of the reviews said they were a little greasy. This was easier than pre-cooking the bacon at all and worked perfectly. Thanks for sharing!!

Latin Slaw

I don't think there's anything missing from this recipe. I love it's simplicity because everytime I make it, I'm using it as a topping for tacos that already have tons of flavor and spice. There's no need to pump it up with extra ingredients if you're serving it with seasoned meat. In my opinion, it's simple fresh citrus flavor is just right to compliment any taco filling. Try it with Dee's Roast Pork For Tacos recipe and you'll understand what I'm talking about.

Soft Oatmeal Cookies

I was looking for the Quaker Oatmeal Cookie recipe that you usually find on the inside lid of the container. I bought store brand oats though, so I checked here for something comparable. I think this recipe is almost identical and it was exactly what I wanted. The only thing I changed was I added a cup of chocolate chips. I didn't chill the dough or flatten it with a fork and they turned out great. Thanks for posting this recipe.

Dessert Crepes

This recipe is great. The real deal. Fluffy, lightly sweet, and perfect. I add a little vanilla to mine because I use vanilla every chance I get. I have experimented quite a bit with crepe fillings and my favorite breakfast crepe has creamy peanut butter, vanilla yogurt, and diced peaches. Try it, kids love it too.

Dee's Roast Pork for Tacos

One word, LEGIT. This is exactly what I was looking for in a pulled pork recipe. I wanted to try it in the oven, but I threw it in the crockpot before work instead and it was perfect by the time I got home. Next time I'll cook it in the oven, and I'll try it with a beef roast. I have a feeling you can't go wrong with this one. AWESOME

Curried Coconut Chicken

Love it. I cook it with the lid off to allow some of the liquid to cook down and it thickens as it cools. I was very happy that the first time I ever tried to make a curry I chose this recipe and it was everything I wanted it to be. Thanks for sharing!

Gourmet Mushroom Risotto

Amazing. I love this recipe. I've made it 3 times and it's so delicious. I never have portabellos on hand, but it's wonderful with any type or probably none at all. I will say I agree with the other reviewers that it takes more than 15-20 minutes. More like 45 for me but that could also be because I live at 4200 ft elevation. I would make it if it took an hour. It's worth every minute. Plus, tonight we fed 7 people and I still have leftovers. Thank you!!

Eggplant Parmesan II

I should have read the reviews. The top pieces were undercooked spongy and a bit bitter even after baking on each side for 7 minutes and heating the whole dish for 45. But I will make it again, next time I will just cook them for 5-7 minutes at 450 to brown them and give myself an hour to bake the dish. Also, 2 eggplants was all i had and I made a 4 layer 8x12 casserole.
