I'm a busy mom of 3 with a full time job and little time for cooking. I'm always looking for a good quick fix recipe that is healthy, colorful, and imaginitive.
My favorite things to cook
I love anything with a big spinach salad. I like my food clean and simple like a seared tuna steak or a tilapia fish taco with pico de gallo and cabbage slaw. YUM!!!
My favorite family cooking traditions
No matter what we're cooking or what the occasion, my mom and I usually have a mimosa in hand!
My cooking triumphs
I did my first Thanksgiving for 10 people last year on my own. It took 3 days to prepare, and was over in about 30 minutes!
My cooking tragedies
I play "chemistry kitchen" a lot and there are definitely some flops, but that's when I've learned the most. It might take a dozen tries to make the perfect spice cake, but at least I learned 11 ways not to make a spice cake.

Curried Coconut Chicken
Love it. I cook it with the lid off to allow some of the liquid to cook down and it thickens as it cools. I was very happy that the first time I ever tried to make a curry I chose this recipe and it was everything I wanted it to be. Thanks for sharing!

Gourmet Mushroom Risotto
OUTSTANDING. I love this recipe. I would say it's the best risotto I've ever made except it's the first and only recipe I've tried because I just can't see any reason to look for another. I've made it countless times and it's so delicious. I never have portabellos on hand, but it's wonderful with any type or probably none at all. I will say I agree with the other reviewers that it takes more than 15-20 minutes. More like 45 for me but that could also be because I live at 4200 ft elevation. I would make it if it took an hour. It's worth every minute. Plus, tonight we fed 7 people and I still have leftovers. Thank you!!
