Easiest Eggplant

Wow! This is amazing! I have had really bad luck cooking eggplant in the past, but this turned out great and was very easy. I used a very thin layer of mayonnaise and cut mine into disks instead of steaks like the recipe suggests.

Zucchini Corn Fritters

Fabulous recipe. It made a ton of fritters, way more than I expected. The only thing I would change would be to put in more vegetables. I ended up adding more veggies to the batter bowl in the middle of cooking them.

Grilled Zucchini Pizza

I had a large zucchini and no idea what to do with it, this was a great way to use it. Good recipe if you're cooking for someone who doesn't normally like vegetables. There was waaaay too much butter though. I will use 1/4 cup or even less the next time.

Fabulously delicious and easy! The only issue I had was, when I indented them with my thumb print, they cracked on the sides. But I love how few ingredients are needed. I also added some vanilla as other reviewers suggested.

Mushrooms with a Soy Sauce Glaze

Fantastic recipe! I used margarine instead of butter and it worked fine. I also used baby portabellos instead of the white mushrooms. It was a great way to use up extra mushrooms that I didn't know what to do with.

Easy French Dip Sandwiches

Perfect, easy recipe! Made these for a family gathering and everyone loved them. I am a vegetarian so I made a couple that with grilled mushrooms and french onion soup to dip instead.

Harvest Sweet Potato Soup

Yum. I made this recipe vegetarian by using veg. broth. It tastes just like a cream based soup but is way healthier. Also I wanted to double it but I was two sweet potatoes short; I used 4 sweet potatoes and 2 regular potatoes and it turned out great.

Cabbage and Dumplings

This is good. I topped it with soy sauce like suggested because it's kind of a plain dish. But I like plain. Easy to make - be sure to make small balls of dough, I made mine big and ended up cutting them up in my bowl.

Garlic Broccoli Spears

Crispy Barbequed Tofu Slices

Wow! This was SO good. I cooked it in the oven before, like suggested, and it worked great. It takes a while to prepare - a lot of steps, but definitely worth it! I think even meat eaters would like it.

Fried Mozzarella Cheese Sticks

These were fun to make. I didn't have a deep fryer and had a hard time getting the temperature right on the stove; medium-high was too hot and medium was too low. Also the breading was a bit thin and they didn't have that stringy texture of the mozzarella sticks you get at a restaurant. I had a ton of extra breading so I covered and fried some dill pickle slices too, they were even better than the mozz. sticks.

Almond-Topped Fish

I thought it was delicious! My boyfriend is a picky eater and it wasn't his favorite. I will definitely make it again, but for anyone who doesn't like a lot of different flavors I wouldn't recommend it. It is a flavorful, rich dish that makes the fish anything but boring. Also, I didn't have measuring spoons so I just guessed on the measurements and it worked fine.
