Coconut-Avocado Ice Cream

I halved the recipe, using 1 avocado, coconut milk instead of milk, sweetened pineapple juice instead of the coconut cream, only 1/8 cup of sugar, added the lemon juice, threw in about a quarter cup of shredded coconut (I LOVE coconut!) and blended it. I added a handful of chopped dates once it was done and it turned out delicious! I tried a spoonful of it right afterwards and it was so delicious that it never made it to the freezer! Thanks so much for sharing!

Peanut Butter and Pumpkin Dog Treats

There were only 2 small changes that I made to this recipe: 1) I subbed 1/2c flour with 1/2c oats. 2) No salt. I rolled them into balls and pressed them with a fork and they came out pretty cute :) My dogs are very picky eaters, and they love 'em! Thanks for sharing!

Flea Terminator Dog Treats

I'm not comfortable with using bouillon cubes in my food, let alone my dog's food! I decided to make chicken broth (chopped chicken breast, carrots, green beans, and broccoli) from scratch and go ahead and make the pups some chicken and rice while I was at it. I strained 1 1/2 C of the broth into a measuring cup before I added the rice. I've never used brewers or nutritional yeast before, and I found a web page with descriptions of different yeasts. It listed yeast extract as a substitute for brewers yeast and peanut butter as a substitute for yeast extract. So I threw about 1/2 C of pb into the dry mix with the broth :) Instead of 2 egg yolks, I used 1 egg. I used a 1 1/2 inch star-shaped cookie cutter and they came out super cute! My dogs are picky eaters and they rated this recipe 5 stars!

Rubbed and Grilled Pork Loin

I've been using this site for years for nearly every recipe I've made and I just had to comment on the two that I made tonight! I made this recipe with just a couple modifications. I used smoked paprika and added chipotle powder to the rub; and I added some molasses to the EVOO spread in the beginning. I let it marinade for a few hours, first. There is a gas grill built into my back porch, connected to the home's gas line. VERY convenient, but I prefer charcoal to gas and I'm sure this would taste even better had I used charcoal! Anyway, the only settings on the grill are HI/MED/LOW with no thermometer. I left it on MED for 20 mins, and the bottom side was a little crisp/slightly burned, but looked beautiful. I turned it down to LOW and flipped the meat over. After 15 mins, the bottom was burned! The temp was only 130, so I put it in the oven for 20 mins as I finished the sides and it came out super juicy! I used the grease that dripped in the pan to sautee some asparagus, and wow! I will be trying this rub with other meats :) Thanks for sharing!

Caramelized Onion and Horseradish Smashed Potatoes

I've been using this site for nearly every recipe that I've made for years and I've never left a review, but this was awesome! I made a few changes due to what I had on hand. The only local-grown produce at the farmers' market right now are sweet potatoes and turnips. I've never cooked, or even tried, turnips so I grabbed a couple. I found recipes that boiled them with potatoes and mashed them together, but when it came time to prepare the meal, I was looking for that recipe and this one definitely caught my eye! I love onions with everything! I don't like horseradish or dijon mustard, so I left those out. I don't have white wine vinegar, so i halved some cooking sherry with rice vinegar. I also love sour cream with my mashed potatoes, so I halved that with 2% milk in place of the half & half. I didn't add any butter at the end because I had only sauteed one onion (adding a couple cloves of garlic near the end) with the 3T of butter, so there was plenty when I mixed everything together! The potato to turnip ratio that I used was 2:1, so it was a smaller batch than what this recipe makes. I will definitely make this again, but with more onions next time! Thanks so much for sharing this :)
