Ok, let me start off by saying that I do not like sweet potatoes. BUT, I felt obligated to make something for the sweet potato fans at Thanksgiving. Oh My Goodness! It is awesome. Everyone had seconds - including me and the other "I am not a sweet potato fan" members. I had to make copies of the recipe for everyone. I made everything except the topping the day before. I followed the recipe exactly. However, I did not bake it, but put it in the fridge. On thanksgiving, I added the topping and then baked it. This is definitely a keeper. And I like being able to make it a day ahead. I guess I am now a sweet potato fan!

These are AWESOME! Made them as an appetizer for a party. They were gone in no time! Making them as a main dish next time. Definitely a keeper!
