Dark Chocolate Cake I

This cake was amazingly good. I used 2 pans, and this made the baking time about 15 minutes more. I also separated the eggs and whisked the whites with 1/4 of the sugar, although I don't know how much of a difference that made.

Apple Cider Sauce and Pork Loin Chops

Made this once before a while ago, but it wasn't as successful as tonight's dinner, as I actually had all the ingredients this time. Didn't have apple cider concentrate, so I simmered 24oz apple cider until it reduced to 8oz. Sauteed 2 onions and some garlic too. Everyone loved these pork chops.

Naan

This was SO GOOD!!! I proofed the yeast and used all-purpose flour, and 2 1/4 tsp yeast instead of a packet. I made the naan on our indoor grill and they were fantastic! Between 6 people, the full batch very quickly disappeared

African-Style Oxtail Stew

Very good! I only made a third of the recipe, used dried kidney beans that I had soaked, and added some carrots and a potato. Omitted the cornstarch and added some okra to attempt to thicken it. Made it in the slowcooker after browning the oxtail first. Turned out really delicious

Butterhorn Rolls

made these with butter instead of shortening, didn't roll them out, just formed balls. turned out good, kind of had the texture of a tea-biscuit, but people really liked them, and the no-kneading is a total bonus

Frozen Bananas

These are so amazing! Didn't have popsicle sticks so I just cut the bananas in 4 pieces each. Dipped in dark chocolate. The chocolate froze too fast to put the nuts (I used cashews) on, so the next time I made it I mixed the chocolate and nuts before dipping banana pieces. Also read somewhere that you should use really ripe bananas, that way the banana flavour is really apparent.

Cinnamon Rolls I

I've made this a bunch of times. It's one of the fastest cinnamon roll recipes that I've found, and it doesn't take any milk, which is great. I still add some confectioner's sugar sometimes as a glaze

Glazed Almond Bundt Cake

Made this exactly as the recipe stated, except for the increase of vanilla and almond extract as stated by other reviewers. I don't have a bundt pan so I made a 3 tier cake instead. Frosted the inside with pure raspberry jam (smuckers), and outside with unsweetened whipped cream, toasted almond slivers & fresh raspberries. Yummy!

Melt in your Mouth Cookies II

I needed a brown sugar-less recipe and these were great! Reduced butter to 3/4 c like one of the other reviewers to make things easier, and creamed all the sugars with the butter before adding the other ingredients. These were delicious!

Tiramisu Chocolate Mousse

This is really good. I might've made the coffee a bit too strong, so I won't make it as strong next time. Also replaced the marsala with brandy. Used the mousse as frosting for chocolate cupcakes. Absolutely incredible! Filled the cupcakes with cream cheese mousse (4 oz of cream cheese at room temperature, 1/4 c powdered sugar, 3/4 tsp vanilla extract, 1/2 c chilled heavy cream. Beat the cream cheese, sugar and vanilla until light and fluffy. Beat the heavy cream in another bowl until peaks form. Fold whipped cream into the cream cheese mixture. Cover and refrigerate for at least an hour.)
