Linguine Pasta with Shrimp and Tomatoes

All I can say is WOW! This recipe is incredible!! I used whole wheat spaghetti because I didn't have linguini and Cindy mentioned in her review that she originally wrote the recipe for angel hair anyway. I added the fresh basil and about a cup of half and half at the end. I'll definitely make this again and again!! Wonderful job, Cindy! Thanks for sharing :-)

Simple Carnitas

VERY good! I made this in my crock pot on low all day and the meat was melt-in-your-mouth tender. I forgot to buy oranges, so I subbed limes and the result was delicious. I also used a can of chicken broth instead of plain water. I didn't have a problem with the recipe being too salty like others have complained about. My favorite thing about this recipe is that it's not heavily seasoned with Mexican spices, so the meat can be used in other types of dishes, too. We ate it wrapped in tortillas with cheese and sour cream last night and I'll be making BBQ pulled pork sandwiches with the leftovers tonight. Awesome, versatile recipe, Ken!!

The Best Slow Cooker Cream Corn

After reading several reviews, I decided to reduce the amount of cream cheese to one 8-ounce package and omit the sugar. With these changes, this was REALLY good! I'll definitely make this again.

Peppermint Drops

I love peppermint, so I had no doubt that I would like these cookies. They're delicious! I had planned to taste a couple of the cookies and then freeze the rest to save for Christmas, but there won't be enough left to freeze once my kids and I get done with them. I'll definitely be adding these to my Christmas cookie plates this year. I think I'll roll the balls of dough in colored sugar before putting them on the cookie sheet and flattening them, just to make the finished product a little more festive. Thanks for a great recipe!

Cindy's Awesome Clam Chowder

I wish I could give this more than 5 stars! Here's why: First, it's SUPER easy to put together. Second, it's MUCH less expensive than buying the *gasp!* canned stuff. And third, EVEN I LIKED IT!! I should mention that I really don't like clam chowder at all, but of course the only stuff I've ever tasted was the canned stuff *gasp again!* My kids love clam chowder and fight each other for it if there's not enough to share, so I made this for them. As recommended, I used two bottles of clam juice instead of water to boil the potatoes and carrots in. I had promised the recipe's author on the Recipe Exchange that I would at least TASTE the soup and boy am I glad I did!! The kids almost had to fight ME for this. We'll definitely be having this soup again many, many times. Thanks for making me a clam chowder lover, Cindy!!

Lentils and Rice with Fried Onions (Mujadarrah)

Following other reviewers' suggestions, I used chicken broth instead of water and added cumin and a pinch of cinnamon. I used 4 cups of liquid, but should have used a little more because the beans were still a bit tough. I didn't have any plain yogurt, so we topped it with sour cream. It was very good and filling. I'll definitely make this again.

Delicious Raspberry Oatmeal Cookie Bars

Delicious! I used strawberry preserves instead of raspberry, because that's what I had on hand. These would be great with almost any flavor of preserves. My kids keep asking me to make them again!

Scrumptious Frosted Fudgy Brownies

I, too, received this recipe from Celeste through the Recipe Exchange and have made them multiple times since then. They are fabulous! I usually leave off the frosting, just because we prefer them that way. However, if I'm taking them someplace to share, I include the frosting and get rave reviews. Thanks Celeste!

Don't Chicken Out

Very good! I had chicken leg quarters that I divided into legs and thighs for this recipe. I did add a bit of seasoning to the chicken before sauteeing it in the oil (adobo, salt, and pepper). Other than that, the only changes I made were to reduce the amount of tomato sauce by half and thicken the sauce with a mixture of 1 Tbs butter and 1 Tbs flour at the end after removing the chicken. I served the sauce over the chicken and some steamed white rice. I'll definitely make this again and again. My 9-year-old daughter asked me to say she feels this is "A Masterpiece"!

Spicy Garlic Lime Chicken

Excellent flavor! I read in one review that they added a splash of tequila, so I did the same and it made the dish fantastic. I doubled the spice mixture at the beginning of the recipe and I'm glad I did, because I ended up needing all of it to cover the chicken...I guess I had larger pieces of chicken. I love the strong garlic and lime flavor and the spiciness is just right (although kids will probably find it too "hot"). I'll definitely make this one again and again.

Creamed Spinach

My favorite coffee shop recently stopped offering creamed spinach as a veggie option on their menu and I was devastated! I had never made creamed spinach from scratch at home, so I was looking for a simple recipe. This was exactly what I was looking for! The only thing I did differently was to skip the microwave step, sauteeing the garlic in the butter before making the roux in my dutch oven, and I used a pound of fresh baby spinach instead of frozen (next time I'll use a pound and a half). Even my daughter, who doesn't like cooked spinach, ate hers without complaint! Thanks for a great recipe that will absolutely be a regular in my kitchen :-)

Creamy Au Gratin Potatoes

These were very good au gratin potatoes and I liked the fact that they didn't call for canned soup or Velveeta, because I didn't have either one on hand at the time. I cut the potatoes MUCH thinner to speed up the cooking time (mine took about an hour), added an extra 1/2 cup of cheese, used half and half instead of milk for more creaminess, and added some minced garlic to the cheese sauce (I sauteed the garlic in the butter before adding the flour). For those of you who are ending up with lumpy or greasy results, you're not heating and/or blending your cheese sauce enough before adding it to the potatoes and onions. Use a whisk to incorporate the milk a little at a time until it's all mixed in, then be sure the cheese is completely melted and the sauce is smooth and creamy before pouring it over the potatoes. Use a fork to move the potatoes around a bit so the sauce can work its way down to the bottom layers and you won't end up with plain, bland potatoes at the bottom of the dish and your cheese sauce won't bubble over the top (I filled my pan FULL and didn't have one drop bubble over). I also removed the foil for the last 10 minutes to get that nice brown crust on top. I'll definitely make these again, but next time I think I'll add a little cayenne pepper for a bit of a kick.

Lemon Cream Pasta with Chicken

Excellent recipe! It was far too hot to turn on the oven, so I sauteed the chicken instead of baking it. The only other changes I made were to sprinkle a teeny bit of salt on the chicken while it was sauteeing and I used spaghetti instead of bowtie pasta because that's what I had on hand. Thanks for a yummy, simple recipe! I'll definitely make this again and again.

Berry Oatmeal Muffins

These were just "okay", but I'm not giving up on them yet. The topping made the muffin tops taste really good, but the muffin itself was very bland and a little dry. I'm going to try them one more time, adding more sugar, some vanilla, and a little applesauce for moistness.

Perfect Cheesecake Everytime

I am not a fan of cheesecake, but my mother loves it. I made this for her as a surprise welcome home dessert when she was sent to Ohio recently for a training seminar for work. After she got done raving about how wonderful the texture and flavor of this cheesecake are, she convinced me to take a small taste. I immediately went into the kitchen and cut a big piece for myself afterwards! Excellent recipe that I will absolutely make again and again!

Rosemary Ranch Chicken Kabobs

I had seen this recipe recommended on the Recipe Exchange numerous times and decided to go ahead and try them. After reading the reviews, I cut the salt in half and, because bottled ranch is pretty sweet, I didn't add the optional sugar. These kabobs were SO good! My daughter is having her 13th birthday in a little less than a month and she has requested these as part of the food at her party. Next time I'll mix up some fresh Hidden Valley ranch dressing to use instead of the bottled stuff. Since that dressing is less sweet, I'll add half of the sugar. Thanks for a really good recipe!
