Texas Egg Rolls

AWESOME! These are SO good!! I couldn't find a small package of regular jack cheese and didn't have enough moolah for the big pack, so I used pepper jack instead. I had a large can of chiles, so I ended up with 17 egg rolls. I'm glad for that, because now I get leftovers for lunch tomorrow! I'll definitely make these again and again and can't wait to try baking them, too. Thanks, Baking Nana, for a great recipe!

Pumpkin Cream Cheese Muffins

After reading several of the reviews, I decided to modify these a little bit. I increased the cinnamon in the muffin batter to a full tablespoon and added a teaspoon of nutmeg and a teaspoon of ground cloves. I also added an extra 1/3 cup of pumpkin for moisture. I found the solution to the "soupy" cream cheese problem. Use only the egg white instead of the whole egg and don't over-mix it and it turns out perfect. I followed the advice of several reviewers and put a little batter, then some cream cheese, then a little more batter in the paper liners. I didn't have any pecans, so I used quick cooking oats instead. With these modifications, the muffins were exquisite!

Funky Cholent

This was pretty good, although I don't think my kids liked it. They SAID they liked it, but then they only ate about half of their portions and put the rest back. That's okay...more leftovers for me to enjoy!! I used beef broth instead of water for more flavor and had to leave out the sweet potato because I forgot to buy one. I also did not do the stovetop step. I browned the beef and put it in the crock pot, then sauteed the onions and garlic and added them to the crock pot with the rest of the ingredients. I cooked it on high for about 5-1/2 hours and everything was perfectly tender. Contrary to the feelings of another reviewer, I found the amount of barley to be just right. I'll probably make this again with the sweet potato, because I'm sure it adds some great flavor to the dish.

Steakhouse Black Bread

This was pretty darn close to the bread I've enjoyed for years at Black Angus restaurants! I think next time I'll reduce the amount of molasses a little bit, though, because that flavor was a bit strong. Also, I had to work approximately 1/2 cup more bread flour into the dough so it wasn't sticky, but I know that could have had something to do with the fact that we've had a lot of rain recently, so my flour was probably pretty humid. Overall a great bread recipe that I will make again and again. Thanks for sharing!

Fresh Semolina and Egg Pasta

I don't like giving bad reviews, but I felt that my experience with this recipe was worth sharing. With all the great reviews, I had really high hopes for this recipe, but it just didn't work out for me. The dough was extremely crumbly as written and I ended up having to add quite a bit of water (about 2 Tbs) as well as an additional egg to get it anywhere near kneading consistency. My Kitchen Aid Pro 600 even had trouble kneading this. After I finally got the dough soft enough to manage, I ran a small amount of it through my pasta roller so I could make 8 test raviolis. I was very disappointed with the end result and ended up not using the rest of the dough. The flavor was "okay", but the pasta was tough, even after boiling for almost 15 minutes. I suspect that had something to do with the fact that there's egg in the dough. Most pasta (except egg noodles) doesn't usually have egg in it. I'm sorry, but I think I'll keep looking for an egg-less semolina pasta recipe.

Mexican Zucchini Cheese Soup

Excellent soup! I didn't have any cilantro, so I substituted dried parsley flakes, added at the same time as the oregano. Also, I used half Velveeta and half sharp cheddar, because we prefer cheese soups that way. My 10-year-old daughter loves it, too! Anything that gets kids eating vegetables is a success in my book. I want to try adding a can of drained and rinsed black beans next time. Thanks for sharing!

Breakfast Sausage

Wow, wow, wow!! I halved the recipe just to make sure we liked it and now I wish I had made the whole thing! I made this for my dad because he really likes sausage, but I worry about the fat, sodium, and preservatives he’s eating in store-bought sausage. I used a 19.2 ounce package of extra lean ground pork and got 15 two-inch patties out of it. I omitted the red pepper flakes because my dad doesn’t care for spicy sausage and, based on a few reviews, I cut the brown sugar in half. The flavor was so good that my dad didn’t even add salt…something he applies in liberal quantities to store-bought sausage!! This will be our breakfast sausage from now on. I can’t wait to try it with turkey! Thanks for an awesome recipe :-) ****UPDATE**** I tried this with ground turkey this morning. I cut the recipe in half because I only wanted to "waste" 1 pound of meat if it didn't turn out good, but it was awesome! I use the cheap ground turkey, so it was kind of gloppy after mixing it up. It wasn't possible to form patties with my hands, so I used a tablespoon sized measuring spoon and scooped small mounds into my skillet, then smoothed them into roughly round, flattened shapes. The first time I flipped them over was a little tricky, because they hadn't fully firmed up yet, but after that it was smooth sailing. I made eight patties and then crumble-fried the rest of it for gravy. We had sausage patties with biscuits and gravy for breakfast. YUMMY!!!

Slow Cooker Italian Beef for Sandwiches

This was awesome with a couple of small changes. I used beef broth instead of water for more flavor and, even though I halved the recipe (my roast was only about 2.7 pounds), I used the whole packet of Italian dressing mix. Because of that, I used onion powder instead of onion salt so it wouldn't be too salty. I served this on sesame seed hoagie rolls topped with melted mozzarella, sauteed onions, and fire roasted red peppers. It was OMGosh GOOD!! Thanks for a great recipe.

Zucchini and Potato Bake

YUM!!! I had to sub a green bell pepper, because that's what I had on hand, and crushed Ritz crackers instead of bread crumbs. Both of my kids went back for seconds!! Definitely going to keep this in our regular rotation. Thanks for sharing!

Basil & Garlic Breaded Chicken

This chicken is OMGosh good! My 13-year-old daughter said, "Mom, this chicken is THE BOMB!!" I discovered that I didn't have any bread crumbs, so I crushed up some Ritz crackers and used that instead. I'll definitely make this one again. Than you, laughingmagpie!!

Southwestern Egg Rolls

I made these for New Year's Eve appetizers and they were fantastic! I didn't have time to freeze them, so they were a little difficult to fry, but that wasn't a huge deal. They taste very close to the version that's served at Chili's restaurants. I duplicated the avocado ranch dip that Chili's serves with them by mashing an avocado and mixing it with about 1/2-3/4 cup of homemade ranch dip. I ended up with enough filling for 7 egg rolls instead of just 5. Good thing, because everyone gobbled these down! Since it's a lot of work preparing the filling, I think I'm going to make up a bunch of these to keep in the freezer so I can fry up a few whenever we want them. Thanks for a wonderful recipe!

Linguine Pasta with Shrimp and Tomatoes

All I can say is WOW! This recipe is incredible!! I used whole wheat spaghetti because I didn't have linguini and Cindy mentioned in her review that she originally wrote the recipe for angel hair anyway. I added the fresh basil and about a cup of half and half at the end. I'll definitely make this again and again!! Wonderful job, Cindy! Thanks for sharing :-)

Simple Carnitas

VERY good! I made this in my crock pot on low all day and the meat was melt-in-your-mouth tender. I forgot to buy oranges, so I subbed limes and the result was delicious. I also used a can of chicken broth instead of plain water. I didn't have a problem with the recipe being too salty like others have complained about. My favorite thing about this recipe is that it's not heavily seasoned with Mexican spices, so the meat can be used in other types of dishes, too. We ate it wrapped in tortillas with cheese and sour cream last night and I'll be making BBQ pulled pork sandwiches with the leftovers tonight. Awesome, versatile recipe, Ken!!

The Best Slow Cooker Cream Corn

Peppermint Drops

I love peppermint, so I had no doubt that I would like these cookies. They're delicious! I had planned to taste a couple of the cookies and then freeze the rest to save for Christmas, but there won't be enough left to freeze once my kids and I get done with them. I'll definitely be adding these to my Christmas cookie plates this year. I think I'll roll the balls of dough in colored sugar before putting them on the cookie sheet and flattening them, just to make the finished product a little more festive. Thanks for a great recipe!

Cindy's Awesome Clam Chowder

I wish I could give this more than 5 stars! Here's why: First, it's SUPER easy to put together. Second, it's MUCH less expensive than buying the *gasp!* canned stuff. And third, EVEN I LIKED IT!! I should mention that I really don't like clam chowder at all, but of course the only stuff I've ever tasted was the canned stuff *gasp again!* My kids love clam chowder and fight each other for it if there's not enough to share, so I made this for them. As recommended, I used two bottles of clam juice instead of water to boil the potatoes and carrots in. I had promised the recipe's author on the Recipe Exchange that I would at least TASTE the soup and boy am I glad I did!! The kids almost had to fight ME for this. We'll definitely be having this soup again many, many times. Thanks for making me a clam chowder lover, Cindy!!

Lentils and Rice with Fried Onions (Mujadarrah)

Following other reviewers' suggestions, I used chicken broth instead of water and added cumin and a pinch of cinnamon. I used 4 cups of liquid, but should have used a little more because the beans were still a bit tough. I didn't have any plain yogurt, so we topped it with sour cream. It was very good and filling. I'll definitely make this again.

Delicious! I used strawberry preserves instead of raspberry, because that's what I had on hand. These would be great with almost any flavor of preserves. My kids keep asking me to make them again!

Scrumptious Frosted Fudgy Brownies

I, too, received this recipe from Celeste through the Recipe Exchange and have made them multiple times since then. They are fabulous! I usually leave off the frosting, just because we prefer them that way. However, if I'm taking them someplace to share, I include the frosting and get rave reviews. Thanks Celeste!
