Banana Coconut Loaf

Nummy! I made a few changes, though. I made muffins, not a loaf, so my cooking time was about 20 mins. I used only 1/3 brown sugar + 1/3 cup table sugar, and they were still very sweet. I also substituted 1/4 cup of ground flax seeds, 1/4 cup of oat bran, & 1/4 cup of wheat germ for 3/4 cup of the flour. And I used egg replacer powder instead of egg and 1/4 cup canola oil + 1/4 cup applesauce instead of butter. And I added chocolate chips instead of nuts.

Creamy Butternut Squash Casserole

Very tasty meal. We had this with brown rice and a vinegary cole slaw salad. I made a few changes: I added beans to the squash and onions. I used cheddar instead of Parmesan. And I mixed the mozzarella with some ground flax seeds. My family requested that the next time I make this I have a bigger cheesy layer. So I'll probably just double that part of the recipe.

Lemon Shortbread Cookies

I made a few changes: I substituted a 1/4 cup ground flax seeds for a 1/4 cup of flour. And I used whole wheat flour for some of the all purpose. I also didn't roll and cut them. I just used a spoon and made 1 inch balls of dough that melted into little round cookies. yum.

Snickerdoodles III

Very yum! I changed it a bit, too. Didn't have, so I didn't use any cream of tartar. Used only 1 cup of sugar, but added 1 t of cinnamon to the batter. Used 1 cup whole wheat flour, 1 cup unbleached white, and 1/4 cup each of wheat germ, ground flax seeds, and oat bran. I like the consistency and my son declared them, "The best cookies EVER!" Well, alrighty then; They'll get into our regular rotation!
