Perfect Coconut Macaroons

I absolutely LOVE coconut macaroons. I had 3 egg whites leftover and wanted to do something rather than throw them out and this was the perfect recipe to use them in. I made the recipe exactly as written except for dipping them in chocolate (I may try that later). These were absolutely fabulous! Sweet enough without being too sweet. I would NOT recommend adding extra flour as some reviews suggest - it would likely make them too dry. If you have a hard time with them holding together just "squeeze" the balls hard, packing the dough together. This is what I did and it worked beautifully!!! This will be my go to recipe for sure!

Cedar Planked Salmon

Oh my! I eat a LOT of salmon and have made it numerous ways but I'm always needing to vary the recipes to keep from getting bored. I've made other cedar plank salmon recipes before as well. HOWEVER - this is THE best Salmon recipe I have ever had! I was skeptical adding the Sesame oil, I didn't think the marinade smelled good but oh I was so thrilled with the taste. This is company worthy also. Just fantastic as written.

Rice and Lentil Soup in a Jar

This is a delicious soup with or without the chicken! I love that I can make everything ahead except the chicken and celery (if using) and put in a mason jar and it looks lovely sitting on the shelf.

Slow Cooker Pulled Pork

Sorry to be the detractor here. Yes, it is easy and edible but I like a BBQ where the meat is good even without the BBQ sauce and this just does not fit the bill. Very, very bland before adding the BBQ sauce. Definitely not a keeper for me. Sorry.

Slow Cooker Chicken and Dumplings

Wow! What a great way to have one of my favorite comfort foods with little to no effort! Amazing! I would have given it 5 stars except that I am not a fan of canned biscuits, they taste "funny" to me. Next time I think I will use either frozen dumplings or frozen biscuits and thaw them slightly and then it will definitely be a 5 star recipe! Also, I used boneless skinless thighs which I think gives it a richer flavor! Thanks!

Jo's Rosemary Bread

I'm not normally a big white bread person but this was fantastic! I could have eaten the whole loaf in one sitting. I didn't have dried rosemary so I used fresh from my herb garden and put in 2 tablespoons chopped fine. I also increased the Italian seasoning by another 1/8 tsp. Just fabulous! Thank you!
