Leek Potato Mushroom Cheddar Soup
I liked this a lot -- and I've made it a few times as written. But now I've started to play a bit. This time, no leeks, butter instead of olive oil for more flavour, no milk, and added a bottle of Old Milwaukee beer at the same time as the broth. Served with homemade bacon bits and a sprinkle of cheese. Delish!

Mini Cheesecakes
This makes 18, especially if you are leaving some room on the top for the filling not to spill over the cup. They can also be made with Oreo cookies instead of Nilla Wafers, substituting 1 tsp of vanilla for the lemon juice.

Chicken Pot Pie I
I use fresh veggies when I make this (steam them a little) and only one crust (inverted over the top) to make it a little healthier. I used up my leftover Sticky Rotisserie chicken tonight for a 2nd great dinner compliments of All Recipes!
