Roasted Cauliflower Soup
This was a great starting point & I have to admit I hate it when people do this to recipes. I used curry powder and cayenne pepper instead of ginger and garlic. I roasted an onion cut in wedges and a couple of stalks of celery with the cauli. And happily, everything else was the same. So I had a curried cauli soup with some zip to it to please my "older" kid (i.e. 23 years old!)

Leek Potato Mushroom Cheddar Soup
I liked this a lot -- and I've made it a few times as written. But now I've started to play a bit. This time, no leeks, butter instead of olive oil for more flavour, no milk, and added a bottle of Old Milwaukee beer at the same time as the broth. Served with homemade bacon bits and a sprinkle of cheese. Delish!

Mini Cheesecakes
This makes 18, especially if you are leaving some room on the top for the filling not to spill over the cup. They can also be made with Oreo cookies instead of Nilla Wafers, substituting 1 tsp of vanilla for the lemon juice.
