Kalua Pig in a Slow Cooker

This recipe is amazing!! All I had was tenderloin so I used about six lbs of that. I cooked it from 10:30 pm and shredded it at 8 am. I noticed that it absorbed all the juices so I added a cup of low sodium broth with a tsp of liquid smoke and half tsp of the hawaiian salt, just to make sure to maintain moisture and flavor. Then let cook on low for a couple more hours. Thanks for such a simple recipe!

Soft Oatmeal Cookies

These very soft and hearty! I enjoyed the texture, although I did substitue half of the butter for apple sauce and lower the sugar amount for a lower calorie version. I added white chocolate chips and dried cranberries.

Simple Carnitas

These were really good! I was sad I didn't have more left over lol. I really enjoyed the slight bitterness that the orange peel added. I also cooked this is a crock pot on low for about 8 hours, because I do not own a dutch oven. I used about 1.5 lbs of pork loin because it was what I had on hand, so which means I halved the recipe but I still used two Bay leaves, it added nice earthy flavor. Thanks for the fantastic recipe!

Artichoke Chicken

This was soo good! I took everyones advice and did half sour cream and mayo, I also added a 1/4 cup of canned jalapenos to give it a little kick. The result was moist and flavorful, I will definitely make this again!

Yogurt Chocolate Chip Cookies

These cookies turned out wonderfully! I did make some changes though, I used dark chocolate chunks and butterscotch chips along with chopped cashews. Since butterscotch chips are rather sweet I took the sugars down to 1/4 cup each. I also used apple sauce instead of the shortening and whole wheat flour insteat of white. Since I used the whole wheat I added about 2 more tablespoons of yogurt to keep them moist. Also added a 1/2 teaspoon of pumpkin pie spice to jazz it up. Cookies came out soft with a crisp edge!! So delicious.

French Toast Casserole

I made this over the weekend for an Easter brunch, the flavor was really good! I used a Maple Drop bread along with a Raisin Cinnamon bread. But even though I greased up the pan it stuck real bad, I had to soak it for forever. Other than that everyone loved it and said it tasted just like French Toast.
