Breakfast Casserole

THIS TAKES A FULL HOUR TO COOK IF USING CUBED HASH BROWNS. May take less cooking time if using shredded potatoes. I thought this was great. I got a lot of compliments when I brought it to work. I omitted the chicken, which just seemed weird for breakfast, and added more ham instead. I used a full cup of shredded cheese. I also used cream of potato instead of cream of chicken soup.

Caesar BLT Wraps

We loved this. Nothing fancy, very simple, and also very easy. I would be pleased to be served this at a deli or causual dining restaurant. This would be very good with a flavored tortilla wrap (spinach, garlic, tomato, etc). I diced some boar's head turkey to add to the wrap. I also used ranch dressing instead of caesar due to personal preference.

Simple Baked Apples

I thought this was a great easy receipe. It smelled fantastic baking in the oven! I just used my apple wedger to slice the apples, but I think next time I'll slice them thinner because I let them bake a full hour and they were still not as softly cooked as I'd have liked. I left the peels on for texture and color (and laziness), so that may have caused them to take longer too. Also, I used splenda/sugar blend, which probably didn't carmelize as well as regular sugar would have. But still it was great. I actually didn't have flour on hand, so I just added lots of granola. It was very good and I'll definitely make it again.

Eclair Cake

This was yummy! My family really liked it! I will definitely be making this again! I couldn't resist adding more chocolate to the recipe--I frosted the underside of the second layer of graham crackers. I DO NOT RECOMMEND DOING THIS. It overpowered the cream flavor. The dessert was very good, but we all agreed that it was too sweet and rich. If I had left out the extra chocolate frosting in the middle, it would have probably be great, so I'm giving it five stars anyway, since I strayed from the recipe. Maybe if I made one layer with chocolate pudding and one layer with vanilla pudding... hmm... I guess I just can't leave the recipe as is!

Cherry Cobbler I

This was yummy. My husband really enjoyed it. It was very easy to make, and I will definitely make it again. I cooked it exactly according to the recipe, and my only criticisms are that the juice was pretty runny and very sweet (just a tad less sweet would have been perfect), and that the crust seemed to taste a little more "flour-y" than I like. I'd probably try to reduce the sugar and water poured over at the end, as many have suggested. But I'd rather have more juice than not enough, so not a big deal. I also don't think my cornstarch was mixed in with the sugar well enough (I could see a couple of white lumps on top after it was baked), so that could have contributed to the runniness. I don't know what to do about the distinct flour flavor of the crust. The very top part that was well baked was delicious! Maybe I just needed to cook it longer? The crust did seem to cook through a little more after sitting a while out of the oven, and that helped the flour flavor a little. Overall, I did really enjoy this cobbler and the recipe was simple. I'd definitely serve this to guests.
