Mini Sweet Potato Samosas

These disappeared quickly! I made extra filling (I knew I'd be tasting it the whole time!) and added some cumin and ginger, and mixed in some defrosted frozen peas. I also used olive oil instead of sesame oil since that's what I had. I'll definitely be making these again!

Chewy Cocoa Brownies

These had the exact brownie flavor and texture I love! They were a little soft and messy, but of course I dug in while they were still warm. I followed the recipe exactly, and ended up baking them about 22 minutes. Heaven!

Roasted Beets and Sauteed Beet Greens

This was a wonderful recipe! I'm new to fresh beets, and I was excited to find a recipe for the beets and the greens! I chopped up the beets first and roasted them with chopped sweet potato. They were fantastic with just a little butter.

Roasted Beets 'n' Sweets

This was fantastic! The first time I cooked fresh beets, I roasted them with russet potatoes. Then I found this recipe, and they taste AMAZING with the sweet potato! I could eat this every day, thank you!

Wrapped Salmon

I started making the recipe salmon in puff pastry, and then realized I got phyllo dough by mistake. I searched and found this recipe, and combined the two! I put a layer of spinach longways across the middle of a stack of 8 or so sheets, then laid a whole salmon filet on top of it. I sprinkled the salmon with garlic powder and dill, then topped it with some dijon mustard mixed with a little sour cream. I closed the dough over the salmon, and brushed the top with butter. I then cooked it as directed. It was amazing!

Manicotti Pancakes II

These were fantastic! I used 5 egg whites instead of 3 eggs, and then stuffed them with salmon, mushrooms and spinach and used the yolks to make hollandaise sauce to top them with. They were so easy! Great recipe.

Pumpkin Corn Bread

These are delicious! I made them with gluten-free flour, and added a little ground clove and cinnamon. My kids kept asking for more! I also used these to make Thanksgiving stuffing, and it came out great. Highly recommended!

Veggie Burgers

I combined this recipe with one I found online for original Gardenburgers, so I left out the zucchini and squash, and added shiitake mushrooms, cottage cheese, and cooked brown rice. Also, I used some italian breadcrumbs, more soy sauce, and a can of garbanzo beans. My husband and I aren't huge on the black bean-based burgers, so this recipe was awesome and easy to customize! I cooked these on the George Foreman grill and they came out perfect and didn't fall apart at all.

Perfect Apple Pie

This was my first time ever making an apple pie, and it was awesome. I've never even liked apple pie, I made it for my husband, and I ate half of it! I used Granny Smith, Fuji, Gala, and Braeburn apples, and added 2 tablespoons of whiskey as another recipe suggested. I also used 1/2 brown and 1/2 white sugar, and a premade crust.

I mixed some canned pinto beans, chopped sweet potato, and a little salsa into the veggie mixture and served them topped with the cheese and some sour cream, and even my 2-year-old loved this! This recipe is easy, versatile, and really tasty.

Pumpkin Risotto

I would eat this every day if I could! I made a smaller batch before Thanksgiving to try it out, and loved it so much I made a double batch on Thanksgiving so I'd have plenty of leftovers! I made it with the mushrooms and served it inside roasted acorn squash halves, and it was a huge hit!

These are the best cookies I've ever had, and everyone who I've made them for agrees! Awesome recipe, thanks! I tried these again, and subbed canned pumpkin for the cup of butter, and mixed in about 1/4 cup of cocoa powder, and they came out delicious!

Million Dollar Mussels

This recipe is awesome! I used vegetable broth instead (that's all I had) and I did add about a half cup of heavy cream at the end. We sopped up every last bit with a loaf of Italian bread! I'm going to try using this as a base for a chowder soon, too. Excellent recipe!

Ibby's Pumpkin Mushroom Stuffing

This stuffing is amazing. I'm eating leftovers for lunch again. I mixed together pumpkin bread batter and corn bread batter to make the bread, just because everyone was out of pumpkin bread, and it tasted awesome. I think it helped make it a little less sweet also, so that might help those who don't want it too sweet. Great recipe!

Roasted Sweet Potato Corn Chowder

This is delicious! I boiled the sweet and regular potato together in the vegetable broth and mixed in one can of regular corn, undrained, and one can of cream style corn. I thinkened it up with some shredded cheese melted in at the end. The family begged me to make more!
