I made this a little differently, and it makes it so quick and easy! I boiled the sweet and regular potatoes in vegetable broth with an undrained can of corn and a can of cream style corn. While it was boiling I sauteed the onion in butter, added some cream, and melted in shredded cheese. I mixed that into the chowder when the potatoes were cooked. It thickens right up and it's so good!
